How to Make
In a large bowl, combine the ground chicken and seasonings.

Mix gently until just combined. Avoid over-mixing to keep the patties tender.

Divide the mixture into 8 equal portions and shape into patties.

Cook the patties until golden brown.

Serve immediately or allow to cool completely before storing.

Tips and Tricks
- Don’t overmix the chicken mixture. Mix just until the seasonings are incorporated to keep the patties tender and juicy.
- Use a cookie scoop or kitchen scale to portion the patties evenly so they cook at the same rate.
- Wet your hands lightly with water when shaping the patties to prevent the mixture from sticking, or use gloves!
- Double the batch for meal prep. These patties freeze beautifully and are easy to reheat throughout the week.

15 Minute Chicken Breakfast Sausage Patties
Ingredients
- 1 pound ground chicken (93% lean)
- 1 tablespoon maple syrup
- 1 teaspoon kosher salt
- 1 teaspoon rubbed sage (can sub dried sage)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried thyme
- ½ teaspoon black pepper
- ¼ teaspoon smoked paprika
- Pinch red pepper flakes (optional)
Instructions
- In a large bowl, combine the ground chicken, maple syrup, salt, sage, garlic powder, onion powder, thyme, black pepper, paprika, and red pepper flakes if using.
- Mix gently until just combined. Avoid overmixing to keep the patties tender.
- Divide the mixture into 8 equal portions and shape into patties about ½-inch thick.
- Heat a large skillet over medium heat and lightly grease with avocado oil or cooking spray.
- Cook the patties for 4–5 minutes per side, or until golden brown and the internal temperature reaches 165°F.
- Serve immediately or allow to cool completely before storing.
Notes
- Rubbed sage gives the most classic breakfast sausage flavor, but dried sage works well too if that’s what you have on hand.
- For slightly sweeter breakfast sausage patties, increase the maple syrup to 1½ tablespoons.
- Ground chicken thighs can be used instead of lean ground chicken for extra juicy patties.
- Adjust the red pepper flakes to your preference or omit them entirely for a milder sausage.
- These patties can be made smaller for breakfast sandwiches or larger for serving alongside eggs, pancakes, and other brunch favorites.
- Always cook to an internal temperature of 165°F for safe consumption.
