This blueberry baked oatmeal is made with wholesome oats, juicy blueberries, and sweet over ripe bananas. I love prepping a big bowl of these blueberry baked oats early in the week and saving the rest in my fridge. It makes for a simple and healthy breakfast for those busy morning! I know we all have them!

This blueberry baked oatmeal recipe is so comforting. I love to top mine off with sun butter, fresh blueberries, and coconut! The texture is nothing like stovetop oatmeal where it’s warm, creamy and gooey. Which is equally delicious, however, this baked oatmeal texture is more like a soft chewy oatmeal cookie that I just can’t get enough of!

What you’ll need to make Blueberry Baked Oats

  • Bananas
  • Organic rolled oats
  • Almond milk
  • Chia seeds
  • Flax seed meal
  • Cinnamon
  • Baking powder
  • Fresh or frozen blueberries

Tools needed for Blueberry Baked Oats

  • Large mixing bowl
  • Fork or potato masher
  • Measuring cups
  • Baking dish of choice, I used a round 10″ W x 1 1/2″ H

How to make healthy Blueberry Baked Oats

To start, you are going to need a large mixing bowl. Your first step is to smash the bananas with either a fork or potato masher. I use a fork and it always gets the job done!

Once the bananas are mashed, you will add the almond milk, chia seeds, flax seed meal, cinnamon and baking powder to the mixture and mix until well incorporated.

Then, you will add in the oats to the mixture and using a spatula, mix until well combined.

Once you have your oatmeal mixture, evenly add to baking dish and bake in the oven at 375F for 40 minutes.

Allow the baked oats to set for a few minutes before cutting into them.

Optional Toppings

I like to top mine off with a nut butter of choice and fresh fruit. However, in these photos I used Sun Butter, fresh blueberries and coconut. If you haven’t had Sun Butter before, I highly recommend you try it out. It is a nut free spread that is made from sunflower seeds. The texture is creamy like peanut butter, but it has a very nice flavor, similar to tahini. I think that it adds great flavor to the baked oats!

Ingredients

  • 2 bananas

  • 2 cups of rolled oats

  • 2 cups of almond milk

  • 3 Tbsp chia seeds

  • 3 Tbsp ground flax seeds

  • 2 Tbsp ground cinnamon

  • 1 Tbsp baking powder

  • 1 cup frozen for fresh blueberries + more for topping

Directions

  • Preheat oven to 375 F
  • In a large mixing bowl, mash bananas.
  • Add in almond milk, chia seeds, flax seed meal, cinnamon, and baking powder and mix until well incorporated.
  • Then, add in oats and mix until well combined.
  • Evenly add oatmeal mixture to your baking dish and bake in the oven for 40 minutes.
  • Allow to set for a few minutes before cutting into.
  • Top with toppings of choice and enjoy!
