These simple pancakes are made with Cassava flour, which makes them incredibly fluffy, light and buttery. I love topping mine with maple syrup and fresh fruit to sweeten them up!

A healthy and delicious pancake recipe

Pancakes are a MUST on the weekend for me. I feel like I am unsatisfied when I don’t have pancakes on either Saturday or Sunday. I feel like this is rule that should be accepted by most!

Because I make pancakes so much, I have a ton of different flavors and variety. But these are by far one of my favorites. I love making pancakes with Cassava flour because the Cassava makes these pancakes so incredibly FLUFFY, light and buttery.

They only require a few ingredients, so the recipe can easily be altered for an additives such as fresh fruit, chocolate chips, nuts and so much more.

Cassava Flour is also a great Gluten-Free Flour for those that are gluten sensitive.

  • Cassava Flour
  • Baking Powder
  • Salt
  • Eggs
  • Coconut oil
  • Almond Milk

  • Whisk
  • Measuring Cups
  • Large Frying Pan
  • Non-stick spray
  • Spatula

How to make this simple and delicious pancake recipe

Pancakes are a breeze to make. Only a few standard steps are needed and the recipe will take less than 20 minutes. Sounds like the perfect start to your day to me!

To begin, you will start by mixing your Cassava Flour, Baking powder and salt in a large bowl.

Then you will add in your eggs, almond milk and coconut oil and whisk until well combined.

Consistency of the batter will be a little runny than most- that is okay! They will thicken up on the frying pan as they cook.

Once you batter is prepare, you will then prepare your frying pan by heating it to medium heat.

It’s important that your pan is HOT before adding your batter, this way the batter won’t run and will begin to cook the second it hits the pan.

However, before adding your batter, make sure you spray your pan with non-stick spray. This way, your pancakes won’t stick to the pan and you will have a perfectly golden brown pancakes.

Once your batter and pan are prepared. Add about 1/4 cup of batter to your hot pan. Allow the batter to cook for about 2-3 minutes. Watch the batter carefully and flip once your see bubbles start to form on the outter edges.

Using your spatula, flip the pancakes and allow them to cook for about 1-2 minutes more.

Remove pancake from pan and repeat the process until the batter is all gone.

Top the pancakes off with fresh fruit, butter and maple syrup.

Ingredients

  • 3/4 cup Cassava Flour

  • 1/2 Tbsp Baking Powder

  • 1 tsp Sea Salt

  • 2 Eggs

  • 1 Tbsp Coconut Oil, melted.

  • 1/2 cup + 3 Tbsp almond milk.

Directions

  • Start by mixing flour, baking powder, and salt in a large mixing bowl.
  • Then, add in eggs, coconut oil, and almond milk.
  • Whisk until well incorporated.
  • Heat fry pan over medium heat and spray with non-stick spray or butter.
  • Add about 1/4 of better and allow to cook for about 1-2 minutes.
  • Once you see bubbles start to form on the outside edges, flip!
  • Allow to cook for 1-2 additional minutes.
  • Repeat the process until the batter is finished.
  • Serve warm with fresh fruit, butter, and maple syrup.
