If you like strawberry short cake, then these Strawberry Lemon Bars are for you! These will bring you back to your child hood when your mom would soak strawberries in sugar all day, just so she can pour them over those sponge cakes. Except, these are much healthier for you since the base of these bars are made from almonds.
These bars are best eaten with a fork or a spoon and taste good even days after once the strawberry mixture has soaked into the almond bars.

Ingredients in Strawberry Lemon Bars
The ingredients list looks long, but in all actually this recipe only calls for 6 different ingredients. If you know me, you know that simplicity is key in my life. I love to make all my recipes with minimal ingredients so they are healthy, whole-some and easy to make.
- Almond flour
- Almond pulp (may use all almond flour if needed)
- Apple sauce
- Almond milk + Lemon juice (makes buttermilk)
- Baking powder
- Chopped strawberries
Tools Needed to make delicious Strawberry Lemon Bars
You’ll only need a handful of items to whip up these decadent Strawberry Lemon Bars. In total, there are 8 kitchen tools needed to make these bars. Most of which i’m sure you already have!
- Large mixing bowl
- Measuring Cups
- 8×8 Baking Dish
- Parchment Paper
- Blender (preferred)
- If no blender, potato masher or fork
How to make these Strawberry Lemon Bars
This recipe is broken down into two separate parts: The Lemon Bars, and the strawberry frosting. Each part is simple to make.
To begin, you will want to preheat your oven to 350F and line an 8×8 baking dish with parchment paper.
Then you will want to make your buttermilk by simply mixing together almond milk and lemon juice. Whisk it really well and set aside. The milk will begin to curdle and you will soon have buttermilk.
In the meantime, you will start to make the lemon bar layer. In a large bowl, mix together all of your ingredients with the exception of chopped strawberries, you will add these in last. Once you have you almond flour, almond pulp, apple sauce, almond milk, baking powder combined, you will then add in the chopped strawberries.
I simply added the strawberries to my blender and pulsed them for 1-2 seconds. But if you don’t have a blender, you can just simply chop them finely or squash them with a fork or potato masher.
Pour your batter into the lined baking dish and bake in the oven for 55 minutes or until toothpick inserted in the center comes out clean.
While your bars are cooking, you can start to make your frosting.
To make the best strawberry frosting, you will simply combine strawberries and powdered sugar. I used the same method as above and pulsed the strawberries in the blender for a few seconds then added in the powdered sugar. I stored it in the fridge to thicken while the lemon bars baked in the oven.
Once the lemon bars are finished, allow to cool completely before adding frosting.
How Strawberry Lemon Bars are a healthier dessert option
I know what you’re thinking, theres half a cup of powdered sugar in this recipe. How can it be healthy?! That’s a totally valid question, however, i’m here to show you that they are indeed a healthier dessert option. Also, did I mention they taste just like a strawberry short cake??
To start, the base of these strawberry lemon bars are made from almonds. I combined both almond flour and almond pulp to make these bars super moist. The other additions to these bars is organic apple sauce. The only apple sauce that I use is organic apple sauce where the only ingredients is apples.
The other three ingredients that make up these delicious strawberry lemon bars are almond milk, strawberries and baking powder.
So all in all, we have almonds, apples, lemon, strawberries and baking powder. It doesn’t get any simpler than that!
The frosting is made up of strawberries and powdered sugar. Yes, half a cup can be a lot, but considering it’s for all 12 of the bars, it isn’t that bad. Also, dessert is supposed to have sugar, I never stop myself from indulging.

1 cup almond flour
1 + 1/2 cup almond pulp (may use all almond flour if needed)
1/3 cup apple sauce
1/2 cup almond milk + 2 1/2 Tbsp lemon juice (makes buttermilk)
1 Tbsp baking powder
1/3 cup chopped strawberries
- Start by preheating your oven to 350F and preparing an 8×8 baking dish with parchment paper.
- Then, you will want to make your buttermilk by mixing the almond milk and lemon juice really well. Let it sit for 10 minutes.
- In a large bowl, combine almond flour, almond pulp, apple sauce, buttermilk, and baking powder. Mix with a spatula until well combined.
- Add chopped strawberries to the mixture and pour batter into prepared baking dish. Bake in the oven for 55 minutes.
- In the meantime, make your frosting by combining strawberries and powdered sugar in your blender.
- Allow lemon bars to cool completely before adding frosting.
