Girl scout cookies… we all love them. And how can you say no to that sweet little girl that is standing outside the market. I always have to pick up a box or two when that time of year comes around. But, sometimes I crave those delicious cookies YEAR ROUND. That’s why I took matters into my own hands and created a healthy version of that classic Samoa girl scout cookie.
Now I can’t take all of the credit for these delicious copy-cat girl scout Samoa cookies. I was inspired by @lilsipper and adapted her recipe to include the one and only Granola Butter. The Granola Butter gives these cookies a true graham cracker taste.
These girl scout cookies are healthy since they are made with only a few simple ingredients, and by few I mean FOUR simple ingredients.

- Shredded Coconut
- Granola Butter
- Dark Chocolate
How to make healthy girl scout cookies
These healthy Samoa Girl Scout cookies really can’t get any easier than this.
To start, you are going to need to toast your coconut. There are a few ways that you can do this.
- You can bake the coconut in the oven at 350F for 5 minutes.
- You can air fry your coconut in your air fryer at 350F for 5 minutes.
Both ways work great! I like using my air fryer so that way I don’t have to turn my oven on and heat up the house. We all know that we don’t need that extra heat during these California summers!
While your coconut is toasting, you can start my baking the cookie layer. To do this, simply add your dates to your food processor and blend until smooth.
I like to use Joolies Dates because they are seriously the softest dates I’ve ever had. Typically, you will beed to soak your dates in hot water for 15 minutes to soften them up. But Joolies are so soft that I skip this step. However, any dates will work just fine after soaking!
After blending the dates until smooth, add in the toasted coconut and granola butter and blend until well combined. The texture should be firm like a soft crust.
Using a cookie scoop, scoop the dough and roll them into balls. Place on a baking sheet lined with parchment paper. Repeat until the dough is finished.
Then, using the palm of your hands, press the dough and form into a Samoa cookie shape. Take a chopstick and make a hole in the center. Place the dough in the fridge for a few minutes to harden up.
In the meantime, melt your dark chocolate.
Take the cookies out of the fridge and dip the bottom in chocolate and then drizzle over the top for more chocolate to create a Samoa cookie.
Place the cookies back in the fridge to harden.

1 1/2 cups shredded unsweetened coconut
10 pitted dates
4 Tbsp granola butter
1/2 cup dark chocolate chips
- Preheat oven to 350F. Toast coconut in a thin layer on a baking sheet for 5 minutes, or toast in air fryer.
- In the meantime, add soft dates to your food processor and blend until smooth. See notes above.
- Then, add in toasted coconut and granola butter and blend until smooth.
- Texture should be a soft crust.
- Using a cookie scoop, scoop cookie batter and roll into balls. Place on a baking sheet lined with parchment paper.
- Then, using the palm of your hands, press down and form balls into a Samoa cookie shape.
- Using a chopstick, make a hole in the center of each cookie. Place cookies in fridge to harden.
- In the mean time, melt your dark chocolate chips. Then dip the bottom of each cookie in the dark chocolate and set back onto the parchment paper.
- Then, drizzle more chocolate over the top of each cookie. Set back in the fridge to harden.
