This is my third time trying to perfect the flourless brownie recipe, and I have to say… I like I did it. These brownies have a chocolatey gooey inside with a crispy outside. They are super-fudgy and make for the perfect paleo treat.

You can easily save these brownies in the fridge for the week and just pop them into the microwave for 10 seconds for a delicious dessert throughout the week! I like to top mine off with vanilla ice cream- so yummy!

Homemade brownies recipe ingredients

You will only need a handful of ingredients to make these flourless brownies! If you are a baker, i’m sure you already have most of these ingredients in your pantry already!

Avocado oil- I like to bake with avocado oil because it has a higher smoke point. This means that it can handle high heats. Other oils like olive oil and coconut oil have a lower smoke point which means they cannot handle the high heats. I used to cook with olive oil all the time but realized that I was having stomach issues after I would eat. It wasn’t only me, my boyfriend was experiencing the same issues. The common denominator in all my dishes was olive oil. So I made the switch and ever since then I haven’t had any issues!

Chocolate Chips

Eggs- Eggs allow for the ingredients to bind together and for the brownies to rise during the baking process. I found that this recipe works best when the eggs are beaten first then added into the recipe!

Coconut sugar– To make these brownies paleo coconut sugar is necessary. However, you can sub any other sweetener that you’d like!

Vanilla

Cacao Powder

Tapioca starch– Tapioca starch is also a great binding agent for recipes that don’t have any flour. It is also gluten-free so it makes for a great flourless alternative.

Salt

How to make flourless brownies

You will need two seperate bowls to make these flourless brownies correctly.

To start, you will want to combine the chocolate chips with the avocado oil and either melt them in the microwave or over a double broil on the stove top.

In the meantime, you will want to beat the eggs really well in a medium bowl. A handheld mixer works best, but if you don’t have one you can just use a whisk. You want the eggs to be light a fluffy.

Add in the melted chocolate and avocado oil mixture to the beaten eggs and whisk until a thick mixture starts to form. Add in the coconut sugar and mix until well combined. Add in the vanilla next and mix once more.

In a separate bowl, combine the cacao, salt and tapioca starch then add this mixture to the wet mixture and whisk until the ingredients are well incorporated.

Add in chocolate chips and mix until combined.

Add this mixture to a greased 8×8 baking sheet and top with additional chocolate chips.

Bake in the oven at 350F for 20-22 minutes. Allow to cool completely before cutting into them!

Ingredients

  • 1/4 cup avocado oil

  • 1 cup chocolate chips, melted

  • 2 eggs beaten

  • 1/3 cup coconut sugar

  • 1 tsp vanilla

  • 1/2 cup cacao

  • 1/4 cup tapioca flour

  • 1/4 tsp sea salt

  • 1/2 cup chocolate chips *optional

Directions

  • Preheat oven to 350F, grease an 8×8 baking sheet with coconut spray.
  • Melted 1 cup chocolate chips with avocado oil.
  • In a medium bowl, beat the eggs until light and fluffy about 3 minutes.
  • Pour melted chocolate mixture into eggs and mix until well incorporated.
  • Add in coconut sugar and vanilla and mix once more.
  • In a separate bowl, combine cacao, tapioca flour, and salt and then add dry ingredients to wet and mix with a spatula until well combined.
  • Add in additional chocolate chips and pour batter into greased pan.
  • Sprinkle with additional chocolate chips if you’d like and bake in the oven for 20-22 minutes.
  • Allow to cool completely before cutting into.
