Have you ever enjoyed a meal at a restaurant that was SO SATISFYING, that you had to re-make this. That, my friends is where this recipe came from. I had a bowl that was very similar to this one at one of my favorite vegan restaurants. I can’t take all the credit for coming up with this one, but I did add a few of my own lovely delite touches to it. Let’s get started, shall we?

Ingredients in plant-based sun bowl

This bowl is jam packed with so many whole-some nutrients and whole foods such as sweet potatoes, chickpeas, quinoa, fresh cucumber and tomatoes. From start to finish, this bowl will be ready in under 30 minutes making it the perfect quick lunch or dinner for those busy nights.

I like to use my air fryer to prepare the sweet potatoes and chickpeas. This both cuts down on the cooking time, and also allows you to not have to turn on your oven. I don’t know about you, but I avoid the oven during the summer at all costs!

Tools needed to make this vegan bowl

Like I said above, I prefer to use my air fryer to make the sweet potatoes and chickpeas. However, if you do not have an air fryer- no problem. You can still make this dish with your oven!

The air fryer that I have is from Gowise, it’s an Oven Air fryer and one of my absolute favorite kitchen gadgets! It’s big enough to cook the sweet potatoes and chickpeas in one setting.

If you don’t have an air fryer, you can simply add the sweet potatoes and chickpeas on a single layer and bake them in the oven.

Ingredients

  • 1 large sweet potato

  • 1 cup cooked quinoa

  • 1 15oz can of chickpeas

  • 3 cups mixed greens

  • 1/2 cup cherry tomatoes

  • 1/3 cup black mission figs

  • 1 avocado

  • 1 cucumber

  • Juice from 1 lime or lemon

  • Seasoning for Chickpeas
  • 1/2 tsp ground cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Seasoning for Bowl
  • 1/2 tsp everything but the bagel seasoning

Directions

  • Peel and chop sweet potatoes into bite sized cubes. Add to air fryer in a single layer and fry at 430F for 12-15 minutes.
  • Drain and rinse chickpeas, then season with cumin, garlic and onion powder. Toss until well coated, then lay in a single layer and air fry at 430F for 10 minutes
  • In the meantime, prepare quinoa by adding 2 cups of water and 1 cup of quinoa. Bring to a boil then lower heat to low and let simmer for 15 minutes.
  • Chop cucumbers and slice figs in half.
  • Assemble your bowl by adding mixed greens, then quinoa, sweet potatoes, chickpeas, black mission figs, tomatoes and cucumber. Drizzle with your favorite dressing and enjoy!
