The key to moist, sweet and delicious banana bread is using those brown and ugly overripe bananas. I will purposely buy more bananas than I need just so I can wait for a batch to go bad and make them into a recipe. Overripe bananas are sweeter and easier to bake with.

You wonâ€™t need to do too much kitchen cabinet digging for this recipe, as youâ€™ll only need four items. To make your own Fig Banana Bread, weâ€™ll use the following:
- Loaf pan
- Parchment paper or nonstick spray
- Large mixing bowl
- Rubber spatula
- Blender (If you are making your own oat flour)
As far as measurements go, youâ€™ll need the following increments: 1 tsp, 1 Tbsp, 1/4 cup, 1/2 cup, 1 cup.
How to make Fig Banana Bread
This Fig Banana Bread is very easy to whip together. It requires nothing more than mixing ingredients and then tossing them into the oven! Youâ€™ll need about an hour to make this recipe, with the bulk being devoted to oven time.
To begin making Fig Banana Bread, start by preheating the oven to 350F and lining a loaf pan with parchment paper or spraying with nonstick spray.
Then, you will want to prepare the flax eggs by combining ground flaxseed meal with warm water, mixing and setting aside for about 5-7 minutes or until the mixture is thick.
In a large bowl, mash the overripe bananas, then add in flax eggs, apple sauce and melted coconut oil. Mix until well combined.
Then, add in the chopped figs and cinnamon and stir to combine.
Add the oat flour and baking powder next, and mix with a spatula until just combined.
Next, pour the batter into the loaf pan and be sure that it is evenly spread out.
Add additional sliced figs on top if desired.
Bake the dish in the oven for 45-55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Let cool for at least 30 minutes before serving.
Store on the counter or in the fridge and enjoy within 4-5 days.
Healthier Banana Bread
My whole core mission on Lovely Delites is to create those same recipes that we all love and adore but with better-for-you ingredients. I love to take a recipe that would typically be high in sugar and re-create it with natural sweeteners. Which is exactly what I did here. I did not use any sugar in this recipe, but instead sweetened this loaf with apple sauce. The apple sauce and bananas combined with the Figs gives this bread a sweet and subtle flavor.
For Fig Banana Bread, I used many of my favorite healthier ingredients to create a loaf thatâ€™s more nutrient dense, but still incredibly delicious.
The first swap I made was using oat flour in this recipe instead of regular flour. Oat flour is more nutrient-rich and itâ€™s simply better overall. Instead of canola or vegetable oil, I used coconut oil. This is a healthy fat that benefits cholesterol, blood sugar, and more. Instead of using a processed sugar or sweetener, I used apple sauce. I only use apple sauce that has only one ingredient- apples. You can find this at your local Trader Joe’s.

1 cup fresh figs
3 overripe bananas
2 flax eggs
1/2 cup apple sauce
1/4 cup coconut oil
1 tsp cinnamon
2 cups oat flour
1 Tbsp baking powder
- Preheat oven to 350F and line a loaf pan with parchment paper.
- Prepare flax egg by mixing 2 Tbsp of ground flaxseed meal with 5 Tbsp water. Allow to sit for 5-10 minutes to thicken.
- In a large bowl, mash bananas then add in flax eggs, apple sauce and coconut oil. Mix until well combined.
- Then, add in cinnamon and sliced figs and mix once more.
- Add in oat flour and baking powder last and mix with a spatula until just incorporated.
- Pour batter into loaf pan and top with additional sliced figs.
- Bake in the oven for 50-55 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into. Store in the fridge up to 5 days.
