Healthy granola bars are the perfect snack to have on hand. They are loaded with wholesome ingredients, and jam packed with protein. These bars will leave you both satisfied and full of energy.

If you’re anything like me, when that 3pm slump comes around nothing gets me going again like a healthy snack. Having something ready for me to grab and eat makes me feel good and gives me enough energy to finish off the rest of the work day.

Made with wholesome ingredients

Healthy granola bars are made with a blend of wholesome ingredients. I used oats, shredded coconut, pumpkin seeds and a few other ingredients that I received from BareOrganics.

Chia Seeds– are a great source of fiber, omega fatty acids, essential minerals, and protein. They are so versatile and can easily be added into recipes or drinks. One serving of chia seeds matches 16% of your recommended daily intake of fiber. I absolutely love using chia seeds in my recipes!

Ground Flaxseed– are naturally derived from the fibrous flax plant. When the seeds are grounded, they become a grain like substance that is great to add into recipes. I love that BareOrganics uses cold-milling to process their flaxseeds. This is great because cold-milling better preserves the value of the nutrients that are in the flax seed. Ground flaxseeds provide a balanced combination of healthy Omega 3, 6 & 9 essential fatty acids, along with dietary fiber and protein.

How to make healthy granola bars

These healthy no-bake granola bars could not be any easier to make. From start to finish, these snack bars will be prepped in 10 minutes.

A few kitchen tools before we get started

  • A large mixing bowl
  • Rubber spatula
  • 8×8 baking dish
  • Parchment paper
  • Measuring cups

To start, you will combine all your dry ingredients together in a large mixing bowl.

Then, you will add in the almond butter and sweetener of choice. The sweetener I used for this recipe is yacon syrup. This is a natural, vegan sweetener. However, you can easily swap this for honey, maple syrup, agave, or even date syrup!

Once you have added in your wet ingredients, mix the ingredients with the rubber spatula until well combined.

Then, line your baking sheet with parchment paper and then press the granola into the pan until it is in a single even layer.

Place the granola in the fridge for at least 1 hour to harden. Cut, and enjoy!

Option to drizzle dark chocolate over the bars for a sweeter taste.

Ingredients

  • 1 cup old fashioned organic oats

  • 1/3 cup unsweetened shredded coconut

  • 1/4 cup BareOrganics chia seeds

  • 1/3 cup BareOrganics ground flaxseed meal

  • 1/3 cup BareOrganics Cacao nibs

  • 1/3 cup pumpkin seeds

  • 1 cup almond butter

  • 1/3 cup yacon syrup

  • Optional toppings
  • 1 tbsp cacao nibs

  • 1 tbsp pumpkin seeds

  • 1 tbsp goji berries

Directions

  • Start by preparing your baking dish. Line an 8×8 baking dish with parchment paper.
  • In a large bowl, combine oats, shredded coconut, chia seeds, ground flaxseed meal, cacao nibs, and pumpkin seeds.
  • Then, add in almond butter and yacon syrup (or any other sweetener or choice)
  • Mix until well incorporated, then pour into prepared baking dish.
  • Using your hands, or a separate sheet of parchment paper. Firmly press the granola into the baking dish until it is in an even layer.
  • Optional* sprinkle with toppings of choice.
  • Place in the fridge for a minimum of 1 hour to harden.
  • Optional* drizzle with melted dark chocolate and enjoy!

Notes

  • Best stored in the fridge and eaten within 5 days.
