These chickpea bars were actually inspired by my original Six Ingredient Chickpea Bars. However, I altered a few things to make them Fall worthy.

The best part about these bars is that they are completely versatile. Meaning, you can add whatever toppings you’d like. For this recipe, I decided to stick with simplicity and only added dark chocolate chunks on top.

These are the perfect sweet treat to share with friends and family for the Fall. They will be wildly impressed that they are made with CHICKPEAS! No, you can’t taste them!

Ingredients in the Flourless Pumpkin Blondies

  • Chickpeas (aka garbanzo beans)
  • Maple syrup (can sub agave, agave, date syrup or any other liquid sweetener)
  • Nut butter of choice, I used Peanut Butter (almond, peanut, pecan, etc)
  • Baking Powder
  • Sea salt
  • Vanilla
  • Cinnamon
  • Pumpkin pie spice
  • Ground Flaxseed
  • Pumpkin
  • Dark Chocolate chips

You’ll need just a few items to make this recipe.

  • Blender or Food processor
  • Measuring cups
  • 8×8 Baking Dish
  • Parchment paper
  • Spatula

How to make these flourless pumpkin blondies

This recipe really can’t be any easier! My favorite kind of recipes are the one that you can just throw all the ingredients into a blender or food processor and be done. This is one of those recipes!

To start, you are going to need a blender or food processor. Both will work just fine.

Then, you are going to want to prepare your baking dish. I like to use an 8×8 baking dish and line it with parchment paper. Pro tip* Spray the inside before adding the parchment paper so it does not slide while you’re pouring the batter in.

Your next step is going to be to add all the ingredients into the blender with the exception of the chocolate chips. Blend until smooth.

You can either add in chocolate chips to the batter, or just add some on top- OR BOTH

Pour batter onto your prepared baking dish and using your spatula, spread the batter until it is evenly distributed.

Then, top with additional chocolate chips.

Bake in the oven at 350 F for 25-30 minutes.

Allow to cool completely before cutting into the blondies.

Store in the fridge for up to 5 days, or freeze up to 1 month!

Ingredients

  • 1 can of chickpeas, drained + rinsed.

  • 1/3 cup maple syrup, or any other sweetener

  • 1/2 cup peanut butter, or any other nut butter

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 1 tsp pumpkin pie spice

  • 1/4 cup ground flaxseed

  • 1/2 cup pumpkin

  • 2 Tbsp pumpkin butter (optional)

  • 1/3 cup chocolate chips

Directions

  • Preheat oven to 350F and prepare an 8×8 baking sheet by lining it with parchment paper and coconut spray.
  • Add all of the ingredients, with the exception of the chocolate chips, to your food processor and blend for 2 minutes or until creamy and smooth.
  • Pour batter into prepared baking dish and sprinkle with chocolate chips. Also have the option to add chocolate chips to the batter.
  • Bake for 25-30 minutes. Allow to cool before cutting into.
  • Store in the fridge up to 5 days or the freezer up to 1 month. ENJOY!
