Easy Coffee Cake
One of my favorite things to make for a breakfast or brunch get-together is coffee cake! This recipe is quick, simple and tastes like it took hours to make. The coffee cake itself is so fluffy, buttery and cinnamon-y that everyone loves it.
Have you ever wondered why it’s called coffee cake but there’s no actual coffee in it? I remember thinking when I was younger that I wouldn’t like it- because I didn’t like the taste of coffee (who was I?) Until I realized that it’s just a magnificent cake that pairs perfectly with coffee.
The sweetness of the cake washes down perfectly with a bitter dark coffee. It’s a match made in heaven.

Ingredients needed to make coffee cake
- Almond milk
- Brown sugar
- Almond butter
- Vanilla
- Gluten-free flour
- Baking powder
- Salt
- Cinnamon
- Vegan butter

Ingredients
- Wet Ingredients
1 cup almond milk
1/3 cup brown sugar
1/4 cup almond butter
1 tsp vanilla
- Dry Ingredients
1 1/2 cup gluten-free flour
1 tsp baking powder
1/4 tsp salt
1 1/2 tsp cinnamon
- Streusel Topping
1/4 cup vegan butter
1/3 cup brown sugar
1/4 tsp salt
1/2 cup gluten-free flour
- Icing
1/3 cup powdered sugar
1/2 tsp almond milk
Directions
- Preheat oven to 350F and line an 8×8 baking sheet with parchment paper.
- In a large bowl, combine wet ingredients. Set aside.
- In a small bowl, combine all ingredients to make streusel topping. Set aside.
- In a medium bowl, combine dry ingredients. Then add dry ingredients to wet. Mix with a spatula until well combined.
- Pour batter into prepared baking dish, then top with streusel topping and press slightly into the dough.
- Bake for 25-30 minutes or until toothpick inserted in the center comes out clean.
- Drizzle with icing and serve warm with a cup of coffee.
