A Healthy Banana Bread recipe that everyone will love

Banana bread is a staple in my house hold. I love to buy extra bananas earlier in the week and then whatever is left over I will bake into a yummy treat. This week, I had a ton of over-ripe bananas and old fashioned oats, so I decided to add them together and make a fluffy banana bread recipe.

This banana bread recipe is low in sugar. It’s sweetened with a small amount of maple syrup and of course the bananas. This banana bread recipe is also vegan, and can easily be made gluten-free with the use of gluten-free oats!

How to make Vegan Oat Flour Banana Bread

The best part about making this recipe is that you can throw all the ingredients into one big bowl. I don’t know about you, but dishes are my worst enemy! I love to bake but the cleaning up part is my least favorite part. Which is why I love recipes that only require a few dishes!

To start, you will of course preheat your oven to 350F, prepare a loaf pan and make your chia eggs.

I always make my chia eggs at the beginning of a recipe since they require about 10 minutes to thicken up. To make a single chia egg, simply combine 1 Tbsp of chia seeds with 2.5 Tbsp of warm water. Mix well and set aside to thicken.

Then, I like to prepare my loaf pan by both lining it with parchment paper and lightly spraying it with non-stick spray. This is a great tip so your banana bread won’t stick and also the parchment paper won’t move around while you’re prepping your banana bread.

Once you are prepared, you can start making the batter for the banana bread. In a large bowl, you will start by mashing your banana really well. You want it to be similar to baby food consistency.

Then, add in chia eggs, almond milk, maple syrup, and vanilla. You can either mix with a whisk or a fork. Whisk until well incorporated.

Once you have your wet ingredients combined. You will then add in your dry.

Add in oat flour, baking powder, salt and cinnamon. Once again, mix until well incorporated.

Pour the batter into your prepared loaf pan, make sure that it is even so that way it will cook evenly in the oven. I like to sprinkle mine with chocolate chips, however, you can also mix chocolate chips into the batter.

Bake your banana bread in the oven for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Ingredients

  • 3 over-ripe bananas

  • 1/2 cup almond milk

  • 1/3 cup maple syrup

  • 1 tsp vanilla

  • 2 chia eggs *see notes

  • 2 tsp cinnamon

  • 1/4 tsp salt

  • 1/2 Tbsp baking powder

  • 3 cups of oat flour

  • 1/2 cup dark chocolate chips

Directions

  • Preheat your oven to 350F, prepare a loaf pan by lining it with parchment paper or spraying it with non-stick spray. I like to do both.
  • Then, make the chia eggs by combining 2 tbsp of chia seeds with 5 tbsp of water. Mix well and set aside to thicken.
  • In a large bowl, mash bananas then add in almond milk, maple syrup, vanilla and chia eggs. Whisk until well combined.
  • In a separate bowl, combine oat flour, baking powder, salt and cinnamon. Then, add dry ingredients to wet and mix with a spatula until well incorporated.
  • Option to add in chocolate chips to the batter. I like to add mine on top, but it’s a personal preference!
  • Pour batter into prepared loaf pan, sprinkle with chocolate chips.
  • Bake for 45-50 minutes for until a toothpick inserted in the center comes out clean.
  • Store in the fridge up to 4 days.

Notes

  • To make a chia egg, combine 2 tbsp of chia seeds with 5 tbsp of water. Mix well and set aside to thicken.
  • You can use regular eggs instead of chia eggs if not vegan.
  • Oat flour is just oats blended for 30 seconds until a fine powder forms.
  • You can use regular flour or whole-wheat in place. I have not tested almond flour for this recipe.
