Ingredients needed to make the muffins:
  • Oat flour
  • Coconut flour
  • Coconut sugar
  • Baking powder
  • Salt
  • Apple sauce
  • Almond milk
  • Non-dairy yogurt
  • Vanilla extract
  • Dark Chocolate Chips

Ingredients

  • 1 cup oat flour

  • 1/4 cup coconut flour

  • 1/3 cup coconut sugar

  • 1/2 cup cacao

  • 1/2 Tbsp baking powder

  • 1/2 tsp salt

  • 1/2 cup apple sauce

  • 2/3 cup almond milk

  • 1/3 cup non-dairy vanilla yogurt

  • 1 tsp vanilla extract

  • 1/2 cup dark chocolate chips

  • FROSTING
  • 1/2 cup vegan butter

  • 2 cups powdered sugar

  • 5 tsp superfruit antioxidant blend

Directions

  • Preheat oven to 365F and prepare a muffin tin by spraying with non-stick spray or lining it with parchment paper.
  • In a medium bowl, combine oat flour, coconut flour, coconut sugar, cacao, baking powder, and salt.
  • Then, in a large bowl, combine apple sauce, almond milk, non-dairy yogurt, and vanilla extract.
  • Add dry ingredients to wet ingredients and mix with a spatula until well incorporated.
  • Fold in chocolate chips.
  • Using a cookie scoop, scoop batter and pour into prepared muffin tin. These will rise slightly during baking, so you want to fill them up to the top. Spread evenly.
  • Bake for 25 minutes. Allow to cool for 10 minutes before removing from the muffin tin. Allow to cool on a cooling rack for 15-20 minutes before frosting.
  • Frosting
  • In an electric mixer, combine butter, powdered sugar and superfruit powder and beat on high speed for 2-3 minutes.
  • The longer you beat the butter, the fluffier your frosting will be.
  • Add to muffins and enjoy!
