What is Granola butter?

If you have never had granola butter before, I encourage you to head to Kween and Co‘s website and order yourself a jar, or 10. It tastes like a blend of cookie butter and graham cracker spread. It’s amazing and I highly recommend it to anyone. It’s so nut-free so it’s school safe! For this recipe I used the pumpkin flavor, but you can easily use any flavor you’d like. If you don’t have granola butter on hand, you can this for any nut or seed butter!

The white chocolate that I used for this recipe is from Lily’s Sweets. Again, I am a huge fan of Lily’s products. All of their chocolates are sugar-free and sweetened with stevia. They also have vegan options, but for this recipe I use the white chocolate, which is not vegan.

Can I make this recipe vegan?

YES! This recipe is 99% vegan. To make it 100% simple use non-dairy chocolate for the coating.

No bake pumpkin bites are a simple bite size treat that comes together in just under 30 minutes. These bites are gluten-free and can be made vegan with the use of non-dairy chocolate. Pumpkin bites are made with granola butter, coconut flour and maple syrup.

Ingredients

  • 1/2 cup granola butter or any nut or seed butter.

  • 1/3 cup pumpkin

  • 3 Tbsp maple syrup

  • 1/3 cup coconut flour

  • 2 tsp pumpkin pie spice

  • 1 tsp cinnamon

  • 1 cup white chocolate

Directions

  • In a medium bowl, combine granola butter, pumpkin, maple syrup, coconut flour, pumpkin pie spice and cinnamon. Mix until a dough starts to form.
  • Roll dough into balls and place on a plate with parchment paper.
  • Place balls into the freezer for 15 minutes to harden.
  • In the meantime, melt the white chocolate. You may need to add 1 Tbsp of coconut oil.
  • Then, dip and coat each ball in the white chocolate and place back on the plate with parchment paper and back into the freezer for 10 minutes.
  • Then, drizzle additional chocolate on top to make design. This is option, but encouraged.
  • Place back in freezer to harden for 10 additional minutes and ENJOY!
  • Store in the fridge for up to 4 days!

Notes

  • Granola butter can be subbed for any other nut or seed butter
  • White chocolate can be subbed for any other non-dairy chocolate to make vegan
