From start to finish, these sweet potatoes will be on your table in 20 minutes. Which, honestly, is record time for a potato.

Air Fried Rosemary Potatoes are a flavorful and fragrant side dish that is perfect for nearly any meal. These potatoes will make a great addition to your thanksgiving spread and they also taste great as leftovers the next morning, paired with some scrambled eggs!

Ingredients

  • 1 Tbsp avocado oil

  • 2 Tbsp dried rosemary

  • 1 sprig fresh rosemary

  • 1/2 tsp salt

  • 1 tsp pepper

  • 1.5 lbs petite gold potatoes

Directions

  • Slice potatoes in half and add to a large bowl.
  • Drizzle potatoes with avocado oil and season with dried rosemary, salt and pepper.
  • Toss potatoes until well coated.
  • Add potatoes to air fryer basket in a single layer and fry at 430F for 15 minutes. If it’s in a single layer, no need to toss halfway through.
  • Add fresh rosemary on top serve warm.
