Stuffing is that bread casserole thing that is always at everyone’s thanksgiving. It is made with onions, celery, thyme, sage, broth, and bread. Sometimes simplicity is key!

The stuffing is easy and straightforward to make, even if you’ve never made homemade stuffing before you will find this recipe easy and enjoyable!

Simple and Easy Vegan Thanksgiving Stuffing – is quick to make and stress free. This classic homemade stuffing recipe will be loved by all- no one will even know it’s vegan!

Ingredients

  • 2 cups of celery, diced

  • 1 cup red onion, diced

  • 1 Granny smith apple, diced

  • 2 Tbsp fresh thyme, chopped

  • 1 Tbsp fresh sage, chopped

  • 1/3 cup ground flaxseed meal

  • 1/2 cup dried cranberries

  • 4 cups of bread crumbs

  • 1/4 tsp salt

  • 1 tsp pepper

  • 2 cups salt-free vegetable stock

  • Optional- 1 package of Meatless Farm breakfast sausage

Directions

  • Thaw meatless farm breakfast sausage overnight.
  • Preheat the oven to 350F.
  • In a large saute pan, heat 1 tbsp of avocado oil, then add in diced celery and red onion. Allow to cook for 3-5 minutes stirring occasionally.
  • Then, season with salt and pepper.
  • Next, add in  sausages and using a spatula chop into bite sized pieces. Allow sausages and mixture to cook, stirring occasionally until sausage is golden brown. Remove from heat.
  • In a 13×9 oven safe baking dish, add bread crumbs, diced apples, ground flax and thyme.
  • Then, pour vegetable broth over mixture.
  • Next, add in sausage mixture and sage.
  • Finish by adding cranberries on top.
  • Bake stuffing in the preheated over for 35-40 minutes.
  • Serve warm, and enjoy!
