I’m the type of person that over-buys bananas every week knowing that I won’t eat all of them before they over-ripen. I buy two bunches and immediately freeze one of them for smoothies, the other I will let ripen on my counter while eating maybe one or two, the rest I turn into a baked good.

Bananas are one of those fruits that get better with time. Even those bananas that have absolute no yellow on them are definitely edible and add a bit more sweetness to recipes, like banana bread!

I think I can speak for most when I say banana bread was the ultimate recipe to make during quarantine. I can’t even tell you how many different variations of traditional banana bread that I made during this time, but to name a few: Vegan oat flour banana bread, Vegan Fig Banana Bread, Healthy Paleo Banana Bread.

I was lucky enough to receive a jar of mini Reece’s peanut butter cups in grocery delivery this past week, so I knew that I wanted to make a more indulgent banana bread this time around. I was thinking something chocolatey, and obviously full of peanut butter to pair with the mini Reece’s peanut butter cups!

Ingredients used to make this recipe

Reece’s Peanut Butter Cup Banana Bread has all the ingredients that you think it would have, except no. added. sugar! This recipe is also grain-free as it’s made with a blend of almond and coconut flour making it suitable for gluten-free diets. This recipe also can be altered to make vegan, all you have to do is omit the Reece’s peanut butter cups and use a vegan chocolate chip instead, and swap the regular eggs for chia eggs!

Like all of my recipes, I try to create with simplicity in mind. To make this recipe you’ll only need a few kitchen tools:

  • loaf pan
  • two mixing bowls
  • spatula
  • whisk
  • parchment paper
  • non-stick spray

How to make Reece’s Peanut Butter Cup Banana Bread

I always keep ease in mind when creating my recipes. I want to showcase that you can make delicious food, even for beginners! This recipe will require about one hour to make, with the longest part being the baking time, you’ll only need about 10-15 minutes for prep time.

To begin, preheat the oven to 350F and prepare a loaf pan by spraying it with non-stick spray or lining it with parchment paper.

In one of the mixing bowls, add in the banana and mash either with a fork or potato masher. Add in eggs, vanilla extract and peanut butter and mix really well using a whisk.

In a separate bowl, combine almond flour, coconut flour, cinnamon, baking powder and salt. Whisk once again until ingredients are well incorporated.

Pour dry ingredients into wet and mix with a spatula until a thick dough starts to form. Fold in mini Reece’s peanut butter cups.

Next, pour batter into prepare baking dish and top with additional peanut butter cups. Press into the batter so they bake into the bread rather than sit on top.

Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Allow the banana bread to cool completely before cutting into, and enjoy!

  • 1 cup mashed bananas, about 2 large

  • 2 eggs

  • 1 tsp vanilla

  • 1/3 cup peanut butter

  • 2 1/2 cups almond flour

  • 1/4 cup coconut flour

  • 2 tsp cinnamon

  • 1/2 Tbsp baking powder

  • 1/4 tsp salt

  • 1 cup mini Reeces peanut butter cups + more for topping

Directions

  1. So yummy! Didn’t have Reese’s or coconut flour on hand so used dark chocolate chips and additional almond flour as a sub, turned out great! So soft and moist! Love it!
