The weekends are my favorite, mainly because I have the time to create a big and plentiful breakfast. I usually, if not always, make either pancakes or waffles on the weekends. I have a ton of different pancake recipes on my website, but I don’t have any waffles recipes? So I knew this past weekend that was what I needed to create.

Although I am not 100% vegan, I do try to eat mostly vegan meals (which is why majority of my recipes are plant-based/vegan. Also, I want my recipes to be able to be enjoyed be ALL- vegan and non-vegans. These vegan waffles are the perfect blend of fluffy and crispy. The best part is that they are both vegan AND gluten-free making these waffles suitable for almost everyone!

To my non-vegans- don’t worry! You’d never believe that these actually don’t contain any dairy, buttermilk, eggs, or gluten! They’re that good.

What’s in Vegan Waffles?

Easy Fluffy Waffles are made with real whole foods. Whenever i’m creating a recipe, I always keep simplicity and whole foods in mind. In this recipe you’ll find just that- no funky or weird ingredients. Just the good stuff!

gluten-free flour- I like to use Bob’s Red Mill Gluten-free flour. It’s the best gluten-free flour mix that I have tried that is really a 1:1 replacement for regular flour. If you don’t have this on hand, you can use any other gluten-free flour. If you aren’t gluten intolerant, you can use regular or whole-wheat flour!

baking powder– just a small amount of baking powder is used in this recipe, this will help the waffles be nice and fluffy!

vanilla- vanilla is a must in all of my recipes, I always miss it when I forget to put it in.

almond butter– almond butter will act as the healthy fat in this recipe. I use two tablespoons, this way it adds both flavor and healthy fats! I like the creamy almond butter from Trader Joe’s but you can use any almond butter that you’d like! But keep in mind, the creamier the better!

maple syrup– maple syrup is one of my favorite sweeteners to use in my recipes. It’s natural, it’s vegan and it’s not processed. It’s the best unrefined sugar in my opinion. If you are planning to use maple syrup on top of the pancakes, you an omit this step for a less sweeter waffle.

almond milk– I used almond milk in this recipe, however, if you don’t have almond milk you can use any other nut milk (or milk, if not dairy sensitive) and it will work just fine!

cinnamon- a dash of cinnamon really adds a great flavor to these waffles!

banana- since this is a vegan recipe the banana will act as the binding agent to pull all the ingredients in. This cannot be replaced or modified. You can use eggs instead, but then in fact this recipe won’t be vegan anymore!

Kitchen tools needed to make vegan and gluten-free waffles

This kitchen tool list is short and sweet for this recipe. All you will need is a blender and a waffle iron, that’s it! If you don’t have a blender, you can still make this recipe. Just make sure the banana is mashed really well, leaving no chunks behind!

Tips and tricks

Since these waffles are vegan, there will be no egg. So to ensure the waffles don’t stick to the skillet, make sure that it’s not on super high heat- I went to the second level so they cook low and slow. Secondly, make sure you generously coat the cavities.

I used a fork the nudge the waffles out of place, but with little effort they popped out right away!

How to make vegan waffles

Like I mentioned above, this recipe uses a blender. However, if you don’t have a blender you can still make this recipe. Just make sure the banana is really well mashed and there are no chunks in the batter.

In your blender, add in banana, vanilla, almond butter, maple syrup, almond milk and cinnamon. Blend for 10-20 seconds or until mixture resembles a smoothie.

Stop the blender, then add in gluten-free flour and baking powder. Blend for an additional 5-10 seconds. Allow batter to sit while the waffle iron preheats.

Preheat waffle skillet to desired temperature. I find it best to cook low and slow, so I put mine on medium/low heat. Then, generously coat the skillet with non-stick spray. Make sure you do this really well so the waffles don’t stick.

Cook waffles, when timer goes off. Carefully remove the waffles using a fork. With a gentle nudge, the waffles should pop right out!

Top with desired toppings and enjoy!

Do these waffles save well?

YES! I made these waffles on a Saturday, and enjoyed the rest of them the next morning on a Sunday. I store the waffles in an airtight container, like a Tupperware or stasher bag. The next day, I popped them in my air fryer and fried them at 350F for 8 minutes. They were honestly even better the next day coming out of the air fryer.

The texture was still fluffy but the edges were even more crispy! So yummy!

  • 1/2 tsp baking powder

  • 1 large banana, about 1 cup mashed banana

  • 1 tsp vanilla

  • 2 Tbsp almond butter
