I’m a big snack person, I always find myself reaching for something sweet but healthy in the mid-afternoon. These healthy energy bites are the perfect afternoon snack to keep you going through that mid-day slump.
You also don’t have to worry about this recipe taking a long time to create because they are as easy and easy can get. All you have to do is throw all the ingredients together in a bowl, mix and then roll into balls. YES! It’s really that simple.
Ingredients in Healthy Energy Bites
When I was making these energy bites, I really wanted to focus on pantry staple ingredients that are healthy, have nutritious value and will keep you feeling both satisfied and full.
organic old fashioned oats– I always pick up a box of old fashioned organic oats from Trader Joe’s on my weekly grocery store run. I use these oats in my baking, cooking and so much more. These oats are great quality and an excellent source protein, fiber and healthy fats.
chia seeds- chia seeds are also a great source of fiber, omega-3 fatty acids, protein, and several essential minerals and antioxidants. I add chia seeds to both my oatmeal, overnight oats and baked goods.
hemp seeds– like chia seeds, hemp seeds also contain high levels of omega-3 and also omega-6 essential fatty acids. Hemp seeds have been shown to help support healthy cholesterol levels, immune system function, and may help regulate your metabolism
cacao nibs– cacao nibs are these little crunchy pieces that add both flavor and texture to recipes. Cacao nibs are a highly nutritious chocolate product made from crushed cocoa beans. They’re exceptionally rich in antioxidants that help reduce oxidative stress and inflammation.
goji berries- Like cacao nibs, goji berries also contain healthy antioxidants and are shown to help reduce inflammation. They also contain large amounts of vitamins A and C.
almond butter– I used one ingredient almond butter for this recipe to act as the “glue” to stick everything together. I also pick up a jar from Trader Joe’s on my weekly grocery run. Almond butter contains vitamins, minerals, and fiber.
maple syrup– I use organic maple syrup in the recipe to add a bit of sweetness. You can omit this if you don’t want any added sugar.
How to make healthy energy bites
Creating this recipe is as easy as mixing the ingredients together then rolling into balls. Yup! Nothing crazy over here.
To start, combine all ingredients in a large mixing bowl. I like to mix with a rubber spatula as I find it to be easy, but feel free to use a spoon or wooden spoon if you’d like.
Next, add the mixture to the freezer for 10 minutes to harden. Remove from the freezer and using a cookie scoop, scoop the batter into your hands and roll into a ball.
Place the balls back onto the plate and place back into the freeze for 10 minute to harden. Remove from freezer and enjoy! Best stored in the fridge in an air tight container and enjoyed within two weeks.
