These Matcha white chocolate cookies are absolute to die for. The taste, smell and aesthetic reminds me of Disneyland for whatever reason. I create this recipe when I was playing around in the kitchen trying to create a single serve cookie. I loved the single serve so much that I just had to create a batch of them!

These matcha cookies are both vegan and gluten-free but I promise you’d never believe it. They are made with super simple ingredients like almond butter and maple syrup. For the flours, I used a blend of almond flour and Bob’s Red Mill Gluten-free flour 1:1 replacement. These cookies are crispy on the outer edges, but soft and tender on the inside, honestly, just how I like it.

You can make these cookies in the air fryer, like I did here, or you can bake them in the oven! Both methods work great and you get the same result in the end.

Ingredients in Matcha Cookies

For this recipe I used very simple household ingredients that i’m sure most of us already have in our pantry right now. The most specific ingredient that I used is the Matcha flavored almond butter from Lasto Foods. You can use code HANNAH10 for a discount if you are interested in buying.

If not, no worries! You can still easily make this recipe with good old fashioned almond butter. The only difference I’d suggest is adding in a bit more matcha powder to give it that matcha taste!

How to make matcha cookies

Making these matcha cookies is both simple and quick! All that needs to be done is combining all the ingredients together in a bowl, then baking! YES! It’s really that simple.

To start, preheat the oven to 350F and prepare a baking dish by lining it with parchment paper or a silicon baking mat.

Then, in a large mixing bowl combine the almond butter, maple syrup and vanilla together. Mix with a spatula or whisk until ingredients are well combined.

Next, add in the almond flour, gluten-free flour, baking powder, salt and matcha. Once again, mix with a spatula until a dough starts to form. The batter will be thicker and more dense than your average cookie batter, that’s exactly how we want it!

Add in the white chocolate chips last and once again mix until white chocolate chips are well incorporated into the batter.

Now, this is the fun part. I typically like a bigger cookie than small. Mostly because I think they are better looking for photos! So you have a decision to make here, you can either use one cookie scoop or two!

For the sake of this recipe, I used two cookie scoops and my end result was a bigger shaped cookie! Scoop the batter into your hands and roll into a ball. Place the ball on the baking sheet and flatten with the palms of your hands.

These will spread during baking time, so you don’t want to spread them out too much.

Place the baking sheet in the oven and bake the cookies for about 12-15 minutes. The cookies will be soft to the touch, but that’s okay. They will continue to bake slightly while cooling.

Remove the cookies from the oven and allow them to cool completely before removing.

All that’s left to do is enjoy!

what do these cookies taste like?

I really have no better term than to describe these cookies like DISNEYLAND. I’m not sure why, but that’s what popped into my head when I took my first bite.

These cookies have a crispy outer edges but a soft and gooey center. The white chocolate chips balance out the matcha perfectly. I adore these cookies, and I think you will too!

Ingredients

  • 1/2 cup matcha almond butter, may sub regular almond butter

  • 1/2 cup maple syrup

  • 1 tsp vanila extract

  • 1/2 cup almond flour

  • 1/2 cup gluten-free flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 3-4 tsp matcha powder (use 4-5 tsp if using regular almond butter)

  • 1/2 cup vegan or regular white chocolate chips

Directions

  4. I just baked these tonight and they were amazing, everyone in my family loved them, even my sister who’s usually skeptical, but you won her over with this recipe! It was the right amount of chewy & moist, with a little crisp on the outside, and thick too, perfect cookie texture! Cant believe how healthy it is, will definitely be making again!
