Strawberry Shortcake is one of my favorite childhood desserts to eat during the summer. My mom would always make the strawberries ahead of time by soaking them in sugar. This would make the strawberries so sweet like candy. The only thing I didn’t love about it was how long it took to create.

You would have to make a big batch in the oven and wait for them to cool before you could enjoy. Well, not anymore! This Strawberry Shortcake mug cake is made in the microwave in one minute and thirty seconds. From start to finish you’ll be enjoying a gourmet dessert is just about three minutes!

Ingredients in vegan strawberry shortcake

The ingredient list is really short and sweet, just like this recipe. I’m sure most of us already have all the ingredients in our pantry already! Grab these ingredients and let’s get cooking:

  • flour
  • baking powder
  • salt
  • cane sugar
  • almond milk
  • vanilla

To make sure this recipe is 100% vegan, it’s important to use non-dairy vegan whipped cream and cane sugar that is certified vegan. In case you didn’t know, most cane sugars are processed with animal bone char, making it not vegan. Wholesome Sweeteners has a certified vegan cane sugar which is what I always use!

How to make microwave strawberry shortcake recipe

When I tell you this recipe is quick to make, I really mean it. I love having this for dessert because it’s quick but also doesn’t taste rushed at all. It’s so delicious, fluffy and incredibly light.

To start, combine flour, baking powder and salt together in a small bowl. Add in the cane sugar, vanilla and almond milk and mix until you have a batter.

Then, coat a small ramekin with non-stick spray so that you can flip it upside down and take it out. Then, pour the batter into the greased ramekin and place in the microwave for 1.5 minutes.

Carefully remove from the microwave (it will be hot) and flip the ramekin upside down on a plate. Then, take a knife and carefully cut the shortcake in half.

Now the fun part- assembling the strawberry shortcake. First layer with your favorite whipped cream, again to make vegan make sure you use a vegan whipped cream. Then, layer with freshly chopped strawberries. Top it off with the second layer of the shortcake and once again layer with whipped cream and strawberries.

That’s it! So simple. Dig in and enjoy!!

Ingredients

  • 1/4 cup + 1 Tbsp flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1 Tbsp cane sugar

  • 1/2 tsp vanilla extract

  • 1/4 cup almond milk (may sub any other milk or nut milk alternative)

  • Strawberries (I used 3-4 large ones)

  • Non-dairy vegan whipped cream (or regular if you don’t mind it to not be vegan)

Directions

  • To start, combine flour, baking powder and salt together in a small bowl.
  • Add in the cane sugar, vanilla and almond milk and mix until you have a batter.
  • Next, coat a small ramekin with non-stick spray. Then, pour the batter into the greased ramekin and place in the microwave for 1.5 minutes.

    Absolutely loved this simple and delicious recipe! I tried it with oat flour, coconut flour, and almond flour. Oat flour is THE only GF option here haha. But so delicious, quick to make, and light and refreshing.
