Never again will you have to choose between making brownies or chocolate chip cookies. This Healthy Brookie recipe is the perfect balance of brownies and cookies. This recipe is made with simple and healthy ingredients and is both vegan and gluten-free!

I was in the kitchen recipe testing, and I just couldn’t decide if I wanted to make chocolate chip cookies or brownies. That’s what I had the best idea to create one recipe that includes both! That’s when this grain-free and vegan brookie recipe was created.

This cookie recipe is grain free, refined sugar free and is suitable for anyone following a paleo, vegan, or gluten-free diet. These cookie are pillowy soft, crispy on the outside but soft and tender on the inside. A dream cookie if you ask me!

Ingredients in healthy brookies

This brookie recipe is on the healthier side as it’s made with almond flour, and sweetened with maple syrup. Both of which are refined and unprocessed. Grab these handful of ingredients below and let’s get baking!

  • nut butter- for this recipe I actually used a pecan date nut butter which gave these cookies a caramel sweet flavor. However, feel free to use any type of nut or seed butter that you’d like. Some suggestions would include peanut butter, cashew butter, almond butter, granola butter, or sunflowerseed butter!
  • maple syrup- I use organic maple syrup as the sweetener in most of my recipes. I get a big jug of it from Thrive each month.
  • vanilla extract- I use organic vanilla extract from Simply Organic. Vanilla always adds so much flavor to any recipe, I wouldn’t skip it!
  • almond flour- I get a big 3lb bag of almond flour from amazon that lasts me a few months for my baking. I wanted to make sure this recipe was simple to make, so I stuck with one source of flour and they turned out great!
  • baking powder- this will help the cookies rise and be nice and fluffy. Make sure you are using a gluten-free baking powder if you are gluten sensitive.
  • salt- salt is necessary in any recipe to balance out the flavors.
  • chocolate chips- to ensure this recipe stays vegan, it’s important to use vegan dark chocolate chips. If you aren’t vegan, then you can absolutely sub your favorite chocolate chips here.
  • cacao powder- I use organic cacao powder that I pick up from Trader Joe’s!

How to make healthy brookies

Now that we have gathered all the ingredients, it’s time to get baking! This recipe is very simple to follow, you will only need one mixing bowl, a baking sheet and some parchment paper. You may also use a silicon baking mat which is what I always use when it comes to baking.

To start, preheat the oven to 350F and prepare a baking sheet by lining it with parchment paper or a silicon baking mat.

In a large mixing bowl, combine nut butter, maple syrup and vanilla extract. Mix with a spoon or whisk until ingredients are well incorporated.

Next, add in almond flour, baking powder and salt. Mix with a rubber spatula until a dough starts to form. It may be a little sticky, that’s okay!

Fold in the chocolate chips last and mix once more. Separate the batter into two equal parts. Using a cookie scoop, scoop the chocolate chip cookie dough batter and place on the baking sheet. I was able to get 9 cookies from each batter.

With the remainder of the batter we will make the brownie cookies by adding in the cacao powder. Mix until well combined. Then, scoop 9 more cookies and place on the baking sheet next to the regular chocolate chip cookie dough.

Next, with your hands combine the chocolate chip cookie and brownie into one large ball. Flatten slightly with the palm of your hands and place back on the baking sheet. These will spread slightly during baking time.

Bake the cookies for 14 minutes. Let rest on the counter for a few minutes before moving to a cooling rack. Enjoy warm! Best stored on the counter and enjoyed within 3-4 days.

    It’s true! If you can’t decide between baking chocolate chip cookies or brownies, try Hannah’s brookie’s for the best of both worlds! I loved this recipe. It was both easy and delicious. I won’t lie, when I choose dessert recipes from Lovely Delites, I do find myself hiding them from the kids because I just couldn’t bare to reach for one of my favorite treats and find them all gone!
