I love making quick and simple meals. I find that meals with the least amount of ingredients always turn out the best. I love using oat flour in replace of any other flour because it’s filled with fiber and is just all around better for you.

These oatmeal pancakes are vegan and can also be made gluten-free with the use of gluten-free oats. They are also incredibly easy to make and come together in seconds. All you need are the three ingredients, a blender and a skillet to cook them on.

I’ve made many variations of these pancakes, so feel free to get creative and make them your own. For this specific recipe I went with a Strawberry Shortcake Vegan Pancake that is topped with fresh strawberries before baking and afterwards.

Ingredients in Vegan Oatmeal Pancakes

These Vegan Strawberry Shortcake Oatmeal Pancakes are the real deal. They are made with three simple and healthy ingredients and can totally be customized to fit your liking. You will need these ingredients below to get started:

  • Organic old fashioned oats
  • Applesauce (or 1 banana)
  • Almond milk (or any other milk/nutmilk alternative)

And of course fresh fruit to sweeten things up! Since these pancakes don’t have any sugar mixed into the batter, they won’t generally be super sweet. However, I always eat my pancakes with maple syrup which makes them PLENTY sweet in my opinion.

How to make the easiest oatmeal pancakes

I recommend having a blender to make this recipe. However, if you don’t have one you can still make it by hand, as long as you have oat flour. But please do note that the results may vary since you are using a different method.

To start, add in the organic old fashioned oats to your blender and blend for about 10 seconds or until the oats are broken down and you now have oat flour.

Next, add in the applesauce and almond milk and blend once more.

Heat a skillet over medium/low heat and coat with your favorite non-stick spray. Add in the batter and top with your favorite fruit. Let the pancake cook for a few minutes or until you see bubbles forming on the outer edges, flip and let cook for an additional 1-2 minutes.

Repeat until the batter is finished. Top off the pancakes with your favorite toppings. I used granola, maple syrup and coconut whipped cream.

How do these pancakes taste?

These oatmeal blender pancakes taste like oatmeal, but in pancake form. That’s the best way that I can describe it. The texture is similar to cooked oatmeal, but they are still fluffy, light and crispy on the edges. It’s truly the best crossover recipe in my opinion!

  1. These are SO. GOOD. and easy! I will never eat regular pancakes after making these. Run, don’t walk to the kitchen – NOW! Yum yum yum!!
