Air Fried Rosemary Potatoes are a flavorful and fragrant side dish that is perfect for nearly any meal. These potatoes will make a great addition to your thanksgiving spread and they also taste great as leftovers the next morning, paired with some scrambled eggs!

The air fryer is by far my favorite kitchen appliance. It can do everything that an oven can do, but in half the time. The key to crispy and tender potatoes is in the air fryer.

From start to finish, these sweet potatoes will be on your table in 20 minutes. Which, honestly, is record time for a potato.

Ingredients

  • 1 Tbsp avocado oil
  • 2 Tbsp dried rosemary
  • 1 sprig fresh rosemary
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1.5 lbs petite gold potatoes

Directions

  1. Slice potatoes in half and add to a large bowl.
  2. Drizzle potatoes with avocado oil and season with dried rosemary, salt and pepper.
  3. Toss potatoes until well coated.
  4. Add potatoes to air fryer basket in a single layer and fry at 430F for 15 minutes. If it’s in a single layer, no need to toss halfway through.
  5. Add fresh rosemary on top serve warm.
