Apple Cinnamon Rolls (No Yeast)
Ingredients
Dough
- 2 cups all purpose flour
- 1 Tbsp baking powder
- 2 tsp cinnamon
- 1/4 cup cane or coconut sugar
- 1/2 tsp salt
- 1/4 cup grass-fed or vegan butter
- 3/4 cup oat milk (or any other milk alternative)
Apple Filling
- 1 tbsp coconut oil (or more butter)
- 2 large honey crisp apples (diced. About 2 cups)
- 1/2 Tbsp cinnamon
- 1 tbsp sugar
- 1 tsp vanilla extract
Apple Frosting
- remainder of apple juices
- 1/4-1/3 cup powdered sugar (or more depending on consistency.)
Instructions
- In a small saucepan, melt butter and milk together until just combined and remove from heat. Don’t over heat this mixture.
- In a large bowl, combine flour, baking powder, cinnamon, sugar and salt. Then, add in the melted butte and milk mixture.
- Using a rubber spatula, mix ingredients together until a dough starts to form. Knead for a minute, roll into a ball and keep in the bowl for 15 minutes.
- In the meantime, dice apples and add them to a heated skillet with coconut oil, cinnamon and sugar. Sauté for 5 minutes and then add the apples to a bowl with a strainer to separate the juices from the apples.
- Preheat oven to 350F and roll out the dough on a floured surface.
- Then add on the drained cinnamon apples and spread evenly. Tightly roll the cinnamon rolls into a log and use floss to cut into individual pieces.
- Grease a baking dish and add in the cinnamon rolls and then bake for 25 minutes or until golden brown.
- Make the frosting by adding in powdered sugar to the remaining apple juices and whisk until combined.
- Drizzle over baked cinnamon rolls and enjoy.
Notes
- Don’t overwork the dough when kneading, instead knead the dough until all ingredients are just combined.
- Removing the juices from the sautéed apples will prevent soggy cinnamon rolls.
- Use the leftover juices to create the apple frosting.
