Ingredients  

  • 3/4 cup milk (or any other milk or nut milk alternative)
  • 1/2 cup cottage cheese (I like good culture)
  • 1/2 cup fresh or frozen blueberries
  • 1 tsp blue spirulina
  • 4 scoops of collagen
  • 3 tbsp maple syrup (may sub honey, agave, date syrup or sugar)
  • 1/2 tsp vanilla extract
  • 1/3 cup chia seeds
  • Toppings: chopped pistachios (dark chocolate, shredded coconut, fresh blueberries)

Instructions

  • In a blender, add in the cottage cheese, milk, maple syrup, vanilla extract, blueberries, blue spirulina, and collagen. Blend for 30 seconds or until ingredients are well incorporated.
  • Add chia seeds to a medium bowl, pour blueberry milk over chia seeds and mix well with a whisk. Let it sit on the counter for 5 minutes and then whisk again.
  • Cover and refrigerate for a minimum of 2 hours or overnight.
  • When ready, give it a good mix with a spoon and serve with more fresh blueberries, chopped pistachios, dark chocolate and shredded coconut if desired.
