Turkey Sausage Breakfast Burrito Ingredients (and Easy Swaps)

Bell peppers & onion: Red, orange, and yellow bring flavor and color, but any combo of bell peppers and onions will work.

Frozen hash browns: Shredded or diced are both great. Leftover roasted potatoes work too.

Ground turkey sausage: You can use crumbled turkey bacon, chicken sausage, or even plant-based sausage.

Eggs: The base of the burritos. Liquid eggs or an egg substitute work too.

Cottage cheese: Makes the eggs creamy and adds protein. Swap with Greek yogurt, sour cream, or skip it.

Shredded cheddar cheese: Any melty cheese works here — mozzarella, pepper jack, or dairy-free cheese are great options.

Ingredients to prep breakfast burritos

How to make

Start with the veggies and hash browns. On a big sheet pan, toss together the diced bell peppers, onion, and frozen hash browns with a little olive oil, salt, and pepper. Spread it all out in an even layer and roast for 20–25 minutes. Give everything a stir halfway through.

Add the turkey sausage. Now crumble your turkey sausage (or turkey bacon!) right on top of the roasted veggies and sprinkle with your favorite taco or all-purpose seasoning. Pop it back in the oven for 5–7 minutes until the sausage is fully cooked. No extra pan needed — we love a low-maintenance breakfast.

Blend up the eggs. While that’s finishing up, blend the eggs and cottage cheese until smooth. (You can totally just whisk it if you don’t want to bust out the blender.) Add a little salt and pepper, and you’re good.

Time to bake it all together. Once the sausage is done, pour that egg mixture right over everything on the sheet pan. Give the pan a gentle tilt if you need to spread it out evenly. Top it with some shredded cheddar, lower the oven to 400°F, and bake for another 25–30 minutes, until the eggs are set and golden on top.

Cool and slice. Let it cool for a bit (go sip your coffee), then slice into 10 squares using a pizza cutter. These little squares are going to be the filling for our burritos — so easy.

Assemble and roll. Mix up a quick spread with Greek yogurt and salsa or hot sauce (this makes them taste fresh even after freezing). Spread a little on each tortilla, place a square of the egg bake in the center, and if you want to add extra cheese, go for it. Roll ‘em up nice and tight.

Wrap and freeze. Wrap each burrito in parchment paper and pop them into a freezer bag or airtight container. They’ll stay fresh in the freezer for up to 3 months. Whenever you need a quick, filling breakfast — you’re covered.

Pro Tips to Make ‘Em Even Better

  • Let the filling cool before rolling: This helps prevent soggy tortillas and keeps everything from steaming inside the wrap.
  • Use parchment paper for wrapping: It keeps the burritos from sticking together in the freezer and makes them easy to grab-and-go.
  • Don’t skip the yogurt sauce: That creamy spread gives the burritos a fresh, tangy bite — especially after they’ve been frozen. Or try my Cilantro Lime Crema or even my Cottage Cheese Queso!
  • Slice with a pizza cutter: It’s the easiest way to divide the egg bake into clean, equal portions for rolling.

Simple Add-Ins and Swaps

Make it spicy: Stir a little hot sauce or diced jalapeños into the egg mixture or use pepper jack cheese for extra heat.

Switch up the meat: Not into turkey sausage? Try chicken sausage, or even breakfast chorizo if you want a spicier kick.

Go meatless: Skip the meat and double up on veggies, or add black beans for extra heartiness. Toss in spinach, mushrooms, or even leftover roasted veggies — just be sure to sauté or roast off any moisture so your burritos don’t end up soggy.

The Best Way to Store and Reheat Your Burritos

To store: Once assembled, wrap each burrito in parchment paper or foil and place them in a freezer-safe bag or airtight container. They’ll keep well in the freezer for up to 3 months. If you’re meal prepping for the week, you can also store a few in the fridge for 3–4 days — just skip the freezer step.

To serve: These burritos are ready to eat straight from the freezer — just reheat and enjoy! I love adding a little salsa, avocado, or hot sauce on top to freshen things up.

  • Microwave: Wrap burrito in a damp paper towel and microwave for 2–3 minutes, flipping halfway through, until heated all the way through.
  • Air Fryer: Place burrito in the air fryer at 350°F for 10–12 minutes, flipping once. Perfect if you want a crispier tortilla!
  • Oven (from frozen): Wrap in foil and bake at 375°F for 25–30 minutes, or until hot in the center.

These Freezer-Friendly Turkey Sausage Breakfast Burritos with Hash Browns are perfect for busy mornings. They’re packed with savory turkey sausage, crispy potatoes, and melty cheese—and they reheat beautifully straight from the freezer.
Prep Time 20 minutes
Cook Time 1 hour
Total Time 1 hour 20 minutes
Servings 10 Burritos

Ingredients

For the veggies:

  • 1 red bell pepper (diced )
  • 1 orange bell pepper (diced)
  • 1 medium yellow onion (diced)
  • 2 cups frozen hash browns (shredded or diced style)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)

For the turkey sausage:

  • 1 pound ground turkey sausage (or crumbled turkey bacon, or fully cooked frozen & thawed breakfast sausage)
  • 1 packet taco seasoning

For the egg mixture:

  • 2 tbsp all purpose seasoning
  • 10 large eggs
  • ¾ cup cottage cheese
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • Salt and pepper (to taste)

For assembly:

  • 10 large, burrito-sized tortillas
  • ½ cup plain Greek yogurt or sour cream
  • 3 tablespoons salsa or hot sauce (for mixing into the yogurt)

Instructions

  • Preheat the oven to 425°F. Line a large sheet pan with parchment paper.
  • Add the diced bell peppers, onion, and frozen hash browns to the baking sheet, drizzle with olive oil, season with salt and pepper, and toss to coat. Spread everything into an even layer and roast for 20–25 minutes, stirring halfway, until the veggies are soft and the hash browns start to crisp.
  • Remove the sheet pan from the oven and crumble the raw (or frozen, then thawed) turkey sausage directly over the veggies and hash browns. Sprinkle with taco seasoning. Return to the oven and roast for another 8-10 minutes, or until the sausage is fully cooked through.
  • In a blender or mixing bowl, blend the eggs and cottage cheese until smooth. Season with a little salt and pepper.
  • Pour the egg mixture evenly over the cooked sausage and veggies. Gently tilt the pan if needed to spread it out, then sprinkle with shredded cheddar cheese. Lower the oven temperature to 400°F and bake for 25–30 minutes, or until the eggs are set and golden on top.
  • Let the egg bake cool slightly, then slice into 10 squares using a pizza cutter.
  • In a small bowl, stir together Greek yogurt and salsa (or hot sauce) to make a creamy spread. Spread a thin layer on each tortilla, place a square of the egg bake in the center, sprinkle with extra cheese if you’d like, and roll up tightly.
  • Wrap each burrito in parchment paper and place in a freezer bag or airtight container. Freeze for up to 3 months.

Notes

  • Let the egg bake cool before slicing. This helps the squares hold their shape better when you roll them into the tortillas — less mess, more structure!
  • Make it work for you. Swap in whatever meat or veggies you have on hand — this recipe is super flexible and a great way to use up leftovers.
  • Reheat in the microwave for 3 minutes, flipping halfway. Pop it in the air fryer for a minute to get it crispy again if desired.

I am planning on making this but I just have 1 question. What is the size of the sheet pan you are using?

Hi Maria! Great question, I used a standard 9×13 inch baking pan for this recipe. You can however, use a smaller one if preferred, you’ll just end up with a thicker filling!
