These Breakfast Street Tacos are a great and simple way to add nutrition to the start of your day. They are made with scrambled eggs, red bell pepper, garlic, onion and served inside of a small, warm whole wheat tortilla. This recipe is ready in under 15 minutes making it perfect for weekday breakfast or weekend  brunch.

Ingredients And Substitutions

These are the main ingredients and substitutions for Breakfast Street Tacos. Scroll down to the recipe card for a full list of ingredients and instructions.

Sautéing a combination of white onion and red bell pepper adds a ton of flavor to the scrambled eggs while creating a nice crunch factor. You can use any color red bell pepper. 

Fresh garlic will add a ton of flavor, but you can also use garlic powder if desired. 

I prefer to use pastured raised eggs which have a bright orange yolk and naturally have more nutrients. But any egg will do just fine. 

Feel free to use any type of tortilla that you desire. I used carb savvy whole wheat tortilla from Trader Joe’s, but I have also use corn and flour for these in the past. All taste amazing with this recipe so it’s really up to preference. 

Finish these tacos off with a touch of pepper jack cheese for a touch of spice and added flavor. You can also use mozzarella cheese, Monterey Jack cheese, cheddar cheese or any cheese that is desired. 

Complete these tacos with a slice of avocado, fresh cilantro and a drizzle of sriracha.

How To Make

ONE: Start by sautéing the onion, red bell pepper and garlic on the stovetop with a touch of extra virgin olive oil or butter. 

TWO: In a bowl, add in the eggs and use a fork or a whisk to scramble the eggs. Pour scrambled eggs into skillet and use a rubber spatula to turn eggs every few seconds. These will cook fast. Remove pan from heat while you warm the tortillas.

THREE: Add tortillas to another skillet and heat over medium heat. Then, assemble tacos by adding the egg mixture into each one, followed by the pepper jack cheese, avocado slice, a touch of flakes sea salt, black pepper and a drizzle of sriracha. Enjoy!

Tips And Tricks

Prep all veggies first before getting started. 

Scramble eggs in a separate bowl before adding to the hot skillet. 

Use a taco stand to hold your tacos perfectly. 

Feel free to finish these tacos off with fresh salsa, guacamole or your favorite toppings. 

How To Serve And Store

Serve these Breakfast Street Tacos warm and with your favorite toppings. I enjoy them with avocado, flakey sea salt, black pepper, cilantro and sriracha. 

Store any leftovers in an airtight container in the fridge and enjoy up to 2 days for best results. Store avocado and cilantro separate. Reheat in the microwave in 30 second increments or until it’s heated all the way through.
