The super bowl is this weekend and if you’re still looking for the perfect buffalo bites to serve at your spread this year, then save this recipe- it’s for you! These Buffalo Chickpea Bites are made with simple ingredients and are perfectly spicy, crispy and meat-free!

Ingredients needed to make Buffalo Chickpea Bites

These buffalo chickpea bites are insanely easy to make and only require a few simple ingredients.

  • phyllo dough- found in the freezer section of most grocery stores!
  • chickpeas- cooked chickpeas from the can, just make sure you drain and rinse them. Or you can make your own at home by boiling them for a few hours.
  • cream cheese- regular dairy or dairy free cream cheese will work here, or you can use greek yogurt!
  • buffalo sauce- you can use Franks, however my personal favorite is Primal Kitchen.
  • toppings: sour cream, lettuce, pico de gallo

How to make these buffalo bites

These chickpea buffalo bites are incredibly easy to make and only require a few steps:

  1. Thaw phyllo dough overnight or on the counter for at least 3 hours.
  2. Make the chickpea filling by blending together chickpeas, cream cheese and buffalo sauce.
  3. Cut the phyllo dough into 3×4 inch slices. Add these to a cupcake liner pan and fill with chickpea mixture.
  4. Bake in the oven at 350F for 25-30 minutes or until phyllo dough is crispy and golden brown.
  5. Add on toppings and enjoy!

Ingredients

  • 1 15oz can of chickpeas, drained and rinsed
  • 8 oz cream cheese
  • 1/2 cup buffalo sauce
  • 1 package of phyllo dough 

Optional toppings

  • Sour cream
  • Lettuce
  • Pico de Gallo

Directions

  1. Thaw phyllo dough overnight in the refrigerator or, on the counter for a minimum of 3 hours.
  2. In the meantime, preheat the oven to 350F. 
  3. In a food processor or blender, add in the drained and rinsed chickpeas, cream cheese and buffalo sauce. Blend for 60 seconds or until ingredients are well incorporated. 
  4. Unroll phyllo dough and cut into 3x4inch rectangles. Using 5 sheets (layers) per cupcake liner, place inside the liners and then fill with 1.5 tbsp of chickpea mixture. Spray with avocado oil spray and then bake for 25-30 minutes. 
  5. Remove them from the oven and let cool slightly. Then, carefully remove from the cupcake liners using a spoon and top with sour cream, lettuce and pico de Gallo and enjoy!  

Notes

Chickpea buffalo bites are best stored in an airtight container and enjoyed within 3 days To warm up bites the next day, place inside the oven or air fryer to achieve that same crispy texture. Microwave will work, but won't be crispy anymore.
