Ingredients and Substitutions

Chickpeas or garbanzo beans that are drained and rinsed.

Buffalo sauce, you can use Franks Red Hot or my favorite from Primal Kitchen Foods.

The tortilla can be regular or gluten-free.

Romain lettuce for that crisp and crunch factor.

Parmesan cheese, can be regular or vegan to make this recipe plant-based.

Avocado slices for added flavor and texture.

How to make

ONE: Toss buffalo sauce in drained and rinsed chickpeas until they are well coated.

TWO: Air fry at 350F for 10-12 minutes shaking halfway through.

THREE: Assemble your wrap by adding the Romain lettuce, parmesan cheese, buffalo chickpeas and avocado slices. Wrap it up tightly like a burrito.

FOUR: Heat a medium skillet over med/low heat and lightly greased with EVOO or your favorite oil. Put the fold side down until crispy and golden brown. Flip and cook the other side for 1-2 minutes.

FIVE: Enjoy immediately with your favorite dressing, or let cool completely and wrap them up tightly with saran wrap and store in the fridge.

Ingredients

  • 13.5 oz can of chickpeas or garbanzo beans, drained and rinsed.
  • 1/4-1/3 cup buffalo sauce (depending on how spicy you want it).
  • 4 Romain leaves, chopped.
  • 1/4 cup parmesan cheese, divided.
  • 1 avocado.
  • 1/4 cup caesar dressing or hummus, for serving.

Directions

  1. Start by draining and rinsing your chickpeas then add to a medium sized mixing bowl.
  2. Add in the buffalo sauce and mix until each chickpea is well coated.
  3. Add the buffalo chickpeas to your air fryer in a single layer and air fryer at 350F for 10-12 minutes. Tossing halfway through.
  4. When ready, assemble the wrap by adding on the chopped Romain, parmesan cheese, air fried buffalo chickpeas and avocado.
  5. Roll the wrap up tightly like a burrito.
  6. Heat a medium skillet over medium/low heat and lightly coat with evoo (extra virgin olive oil) spray. Add in the wrap, fold side down and cook until golden brown. The wrap shouldn't come undone.
  7. Enjoy immediately with caesar dressing or hummus.
  8. If saving for later, let cool completely and wrap in saran wrap and store in the fridge. Enjoy within three days.

Notes

Only add dressing to what you are enjoying immediately, otherwise store the dressing or hummus serperately for best results.
