You only need two ingredients to make this mimosa, the first one being your favorite champagne or Prosecco! Any brand will work. 

Second you need fresh, 100% carrot juice. You can purchase this at the store or make your own in a juicer, totally up to you!

How To Make

ONE: Pour champagne into glass until you’ve reached desired amount.

What I love about mimosa’s is that you get to control how strong or how light you want it! 

I always like to start with the champagne since it takes a couple pours to allow the bubbles to disapate, then add in the carrot juice. 

However, you can also add in desired amount of carrot juice first, then add in the champagne, it’s totally up to you! 

Use store-bought carrot juice for an quick and easy cocktail, otherwise you can make your own with a juicer. 

Use a drink tower to really impress your guests!

How To Serve And Store

Serve this Carrot Mimosa chilled and with a clean, perky carrot stem for a festive cocktail. 

If you’re hosting a large party, then I cannot recommend this drink tower enough. It’s the perfect grab and go hosting hack! 

Carrot mimosas are best enjoyed immediately. However, if you want to make a punch instead you can absolutely mix together the two ingredients and pour out of a drink container instead. 

Taste

Carrot juice is naturally on the sweeter side and it pairs wonderfully with champagne. I have tried this drink with other additions, and after trial and error I came to find that I like the standard carrot and champagne mixture the best!

What is the best prosecco or champagne to use for this recipe?

I used La Marca Prosecco, but you can use any type! Opt for your favorite one, but doesn’t need to be too expensive. Moet is a great one and Veuve Clicquot is a great one too, but more on the expensive side. 

What can I use instead of carrot juice?

The obvious answer would be orange juice, but you can get create and use any type of juice like pomegranate, apple, mango, etc! 

Can I use freshly juice carrot juice instead?

Absolutely! This would take a little longer, but will be much more cost efficient.

Ingredients

  • 5 ounces champagne
  • 1 ounce carrot juice
  • carrot tops for garnish, if desired

Directions

  1. Add champagne into a champagne flute, pouring slowing until you're about 3/4 full.
  2. Then, add in about 1/4 cup or less of carrot juice
  3. Top with a perky carrot top and enjoy chilled!
