I added in maple syrup for a touch of sweetness to the chia pudding, you can also use honey or agave.
Vanilla extract is optional but strongly encouraged as it adds a lovely flavor to the base of this chia seed pudding.
Feel free to use dairy free yogurt or greek yogurt. For the Mango one pictured here, I used plant-based yogurt and for the blueberry and raspberry one, I used chobani greek yogurt.

How To Make
ONE: Start by making the chia seed pudding by combining chia seeds, milk, vanilla extract and maple syrup together in a bowl. Whisk really well, let it sit for 5 minutes and then mix once more. Cover and store in the fridge for a minimum of 1 hour to fully thicken up. This can also be left overnight.
TWO: Then, when ready, layer on the chia pudding, followed by yogurt and choice of fresh or frozen fruit. Cover and store in the fridge up to 5 days.
Tips And Tricks
Make the chia seed pudding the night before and then add to individual containers.
When making the chia pudding, whisk all the ingredients together really well, let it sit on the counter for 5 minutes and then mix once more before placing in the fridge. This is to ensure there are no clumps.
If your chia pudding is clumpy, just mix vigorously until the clumps break up. You can also add in more milk of choice the day after to have a more runny consistency.
Mix up your yogurt and fruit toppings to make breakfast different each day.
Feel free to add on some other toppings like nuts, granola, cacao nibs, shredded coconut, etc!
Use an airtight container to ensure your parfaits stay fresh!
