Coffee Cake Muffins

If you love coffee cake, then you’re in luck
You know what they say, breakfast is the most important meal of the day. I never mind waking up early when I know that I have one of these delicious Coffee Cake Muffins waiting for me in the kitchen.
Ingredients used in these Coffee Cake Muffins
- Almond Flour
- Oat Flour
- Baking Powder
- Cinnamon
- Salt
- Coconut Sugar
- Almond Milk
- Eggs
- Eat Nudge Coffee Butter
- Vanilla
These muffins are made with a mixture of almond flour and oat flour. Did you know that you can make your own oat flour by simply blending oats in a high speed blender for a minute or so? It’s so simple and great to use in your baked goods!
I received a pretty cool product from Nudge. They are a company that created spreadable coffee butter. They also have chocolate bars that don’t contain any chocolate, only coffee. It’s a pretty cool product, however, they do contain milk. So, if you are lactose sensitive then you wouldn’t be able to enjoy these products.
The coffee butter added to these muffins obviously gives these treats a great mocha taste, however, if you don’t have this on hand or can’t enjoy it, then you can simple substitute your favorite nut butter instead!

How to make coffee cake muffins
If you’ve been looking for a go to muffin recipe- you’ve found it! This recipe could not be any simpler, and they make the great addition to those busy mornings!
To begin, you will start by combining all the dry ingredients in a large bowl.
Then, in a smaller bowl, you will combine the wet ingredients. Add the wet ingredients to the dry ingredients and mix until well incorporated.
After you have your batter, you will then pour into the muffin tin cavities. I usually pour about 1/4 cup into the muffin tin. These will rise in the oven slightly, so you want to fill them up to the top.
Make the crumble in a separate bowl by combining melted butter, (I like to use vegan), coconut sugar and oats. Add this to the tops of each muffin and then bake for about 30-35 minutes.
