The main ingredient in these coffee truffles are chickpeas, aka garbanzo beans! Once blended, they are creamy and smooth and provide a great texture!
I personally think cashew butter works best for this recipe, but you can also use almond butter, peanut butter, or sunflower butter/ oat butter for a nut free option.
Opt for a dairy free, vegan dark chocolate to keep this recipe diet friendly. Otherwise feel free to use your favorite chocolate!
A touch of instant coffee is going to add a lovely coffee flavor to these truffles.
Garnish with coffee beans if preferred.
How To Make
ONE: Drain and rinse chickpeas before adding to a food processor along with the cashew butter and melted dark chocolate.
TWO: Blend ingredients together until they are smooth and creamy.
THREE: Use a cookie scoop to add the batter to a baking sheet that’s lined with parchment paper. Roll into smooth balls and place into a freezer to firm up, for about 15 minutes.
FOUR: In the meantime, melt the rest of the dark chocolate. Then, remove the truffles from the freezer and dip and coat in the dark chocolate. Add on coffee beans for a garnish and return to the freezer to firm up once more and enjoy!

Melt the dark chocolate with a touch of coconut oil.
To melt chocolate in the microwave, add in 1 tbsp of coconut oil and heat in 30 second increments, stirring really well in between each round.
