Cookie Dough Baked Oats

Baked Oats is trending on TikTok, so I just knew I had to create a new recipe to keep up with the times. I have a ton of baked oats recipes on my page but this one is different. It’s made with cashew butter and has a creamy gooey center that will leave you feeling warm and satisfied.

Ingredients & substitutions

old fashioned oats– I use the organic old fashioned oats from Trader Joe’s, but you can use any old fashioned oats that you’d like. I have no tested it or tried it with quick oats, so i’m not sure if they would work for this recipe.

baking powder- a small amount of baking powder is used in this recipe to help the center rise. You can omit this ingredient and they baked oats will still work, they just won’t be as fluffy! If you don’t have baking powder, you can substitute baking soda, but please note it won’t be the exact same.

pinch of salt– a pinch of salt to help balance out the sweetness of these oats.

banana- Since this recipe is vegan and doesn’t use egg, a banana is necessary for a binding agent. If you don’t have banana or don’t like banana, you can replace this ingredient with apple sauce, pumpkin, tofu, avocado, or yogurt.

cashew butter- I think cashew butter gives this recipe that “cookie dough” taste. But if you don’t have/like cashew butter you can replace this ingredient with any other nut butter or choice. Almond, peanut, pecan etc!

almond milk- I really only ever have almond milk on hand, but like cashew butter this ingredients can be switched out for any milk alternative. Coconut, cashew, oat, cow’s milk etc.

maple syrup- I use a small amount of maple syrup to really sweeten up this recipe. If you don’t have to have your oats too sweet you can omit this ingredient all together or even replace it with agave, honey or date syrup!

non-dairy dark chocolate chips- to make this recipe vegan, you must use non-dairy vegan dark chocolate chips. However, you can replace this with any type/flavor of chocolate chips or chunks that you’d like!

How to make baked oats

I was so excited to see that Baked Oats were trending. I’ve been making baked oats for years, and i’m so happy it’s a recipe that everyone is enjoying/trying.

They are so easy to make, all you need is a blender, baking dish and that’s really it. These oats will taste like you’re having dessert for breakfast.

To prepare the baked oats, all you need to do is add all the ingredients to a blender and blend until smooth and creamy. Pour into an oven safe baking dish and bake away!

This specific recipe is vegan and I add a tablespoon of cashew butter in the center for a warm and gooey center. It’s amazing and I think you are going to love them as much as I do!

However, if you prefer a more “cake like” center without the gooeyness, you can simply bake the oats for a longer period of time and they will be more of a muffin texture on the center!

Ingredients

  • 1 cup old fashioned oats
  • 1/2 tsp baking powder
  • pinch of sea salt
  • 1 small/medium banana
  • 2 Tbsp cashew butter
  • 1 cup almond milk
  • 1/2 Tbsp maple syrup
  • 1 tbsp dark chocolate chips
Topping
  • handful of dark chocolate chips
  • 1 tbsp cashew butter

2 servings

Directions

  1. Preheat oven to 350F.
  2. In a blender, combine old fashioned oats, baking powder, sea salt, banana, cashew butter, almond milk and maple syrup. Blend until smooth and creamy.
  3. Save 3 Tbsp of batter, and pour the remainder into an oven safe baking dish. Stir in dark chocolate chips until covered.
  4. Add in 1 Tbsp of cashew butter to the center, then pour the reserved batter on top. Sprinkle with additional chocolate chips.
  5. Bake for 30-35 minutes. This will result in a gooey center. Bake for an additional 10 minutes if you want a more solid center.
  6. Allow to cool for a few minutes, then enjoy warm!

I have tried a lot of baked oats recipes and this is my favorite!! I didn’t have banana and substituted apple sauce. So easy and so good!

Is there a way these can be made without banana? I’m not fond of any banana taste but this is a great recipe.

Hi Megan! I’m so glad you enjoyed it! You can store it in an airtight container, or just cover with some foil or saran wrap and store it in the fridge. You can warm it up in the microwave the next morning!
