Base: A blend of Greek yogurt and cottage cheese creates a tangy, cheesecake-like flavor without cream cheese. If preferred, substitute the cottage cheese with an 8oz block of cream cheese.
Sweetener: Pure maple syrup is a favorite choice for its rich flavor, but you can also use cane sugar, coconut sugar, honey, date syrup, powdered sugar, or monk fruit sweetener.

How To Make
Add boiling water to the pitted date and let sit for 10 minutes to soften.

In a blender, add in the cottage cheese, greek yogurt, maple syrup and vanilla. Blend for 10-15 seconds or until ingredients are just combined- careful not to over blend. Pour mixture into a serving dish and place in the fridge to set up.


Remove dates from water and add them to a food processor with a touch of date water, almond butter, flakey sea salt, vanilla extract and half the milk. Blend for 30 seconds, scrape down the sides, add in the rest of the milk and blend again.


Spread on the date caramel on top of the cheesecake filling and finish off with diced almonds. Enjoy with apples!

Cottage Cheese Caramel Apple Dip
Ingredients
- “Cheesecake” Filling
- 1 cup cottage cheese (I used Good Culture)
- 1 cup plain greek yogurt (I used Greek God’s)
- 1/3 cup pure maple syrup (see notes above for substitutions)
- 1 tsp vanilla extract
- Date Caramel
- 1.5 cups pitted medjool dates (about 18 dates)
- 2 tbsp almond butter (may sub any other nut or seed butter, or omit)
- 1 tsp vanilla extract
- 1 cup almond milk (may sub any other milk or nut milk alternative)
- 1/2-1 tsp flakey sea salt (or more if desired)
- 1/4 cup diced hazelnuts (may sub almonds, peanuts or pretzels)
- Serve with red or green apples
Instructions
- Remove the pit from each date and place them in a medium bowl. Pour boiling water over the dates and allow to sit for 10 minutes to soften.
- In a blender, add in the cottage cheese, greek yogurt, maple syrup and vanilla. Blend for 10-15 seconds or until ingredients are just combined- careful not to over blend.
- Pour mixture into a serving dish and place in the fridge to set up.
- Remove dates from water and add them to a food processor with almond butter, flakey sea salt, vanilla extract and half the milk. Blend for 30 seconds, scrape down the sides, add in the rest of the milk and blend again until you reach the right consistency- should be spreadable and not heavy.
- Test your caramel by adding a dollop onto the cheesecake filling, if it sinks then it’s too heavy. Add it back into the food processor and process with more milk if needed.
- Spread on the date caramel on top of the cheesecake filling and finish off with diced hazelnuts.
