I promise you will be making this recipe on repeat for the holiday’s this year. Whether it’s for a family get-together or therapeutic baking session, these cranberry bars will be on repeat for the remainder of the year, I can guarantee that!

These insanely good Cranberry Crumb Bars are everything I want in one delicious dessert. They have a delicious and moist cookie-like crust and are topped with warm, gooey cranberries and then sprinkled with more cookie crust. It’s a match made in heaven. They even taste great with some non-dairy vanilla ice cream on top!

Cranberry Bliss Bars

Ingredients

Cranberry Filling
  • 2 cup fresh cranberries
  • 1/2 cup apple cider
  • 1/4 cup coconut sugar
  • 2 Tbsp lemon juice
  • 2 Tbsp chia seeds
Base + Crumb topping
  • 1 1/2 cup flour
  • 1/2 cup coconut sugar
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup cold butter- cup into cubes
  • 1 flax egg

Directions

  1. Preheat oven to 350F and prepare an 8×8 baking dish by lining it with parchment paper.
  2. In a medium saucepan, combine cranberries, apple cider, coconut sugar, lemon juice and chia seeds and heat over medium-low heat stirring occasionally. Allow the mixture to simmer for about 3-5 minutes. Set aside.
  3. In a large bowl, combine flour, coconut sugar, salt, baking powder, cinnamon, and nutmeg. Then, add in cubed butter and either combine with a fork, or with your hands.
  4. Mix until butter and flour mixture is just incorporated. A few butter clumps are okay.
  5. Then, add in flax egg and mix once more with hands or fork. (Hands are preferred method)
  6. Next, reserve about 2/3 cup of dough and press the remainder of the batter into prepared 8×8 pan and spread evenly.
  7. Pour cranberry mixture over dough.
  8. Then, take the remainder of the dough and break off about 1 tbsp pieces and drop onto cranberries.
  9. Bake in preheated oven for 37-40 minutes.
  10. Allow to cool completely before cutting into. Enjoy!
