There’s nothing quite like a batch of homemade Oatmeal Cranberry Cookies. This is my favorite oatmeal cookie recipe that I altered to make it Holiday inspired. These oatmeal cookies are soft, chewy, and subtly sweet.

The BEST Cranberry Oatmeal Cookies

Have any leftover bananas that are on the verge of going bad, but sick of banana bread? Me too. This recipe is perfect for that banana that you need to use up.

These cranberry oatmeal cookies are soft, chewy and perfectly sweet. They are made with bananas, ground flax, spices and a blend of oats and oat flour.

These cookies were inspired by the Holiday season, so instead of raisins, I’ve added in cranberries and white chocolate chunks.

  • Over-ripe bananas
  • Ground flax
  • Almond milk
  • Coconut sugar
  • Cinnamon
  • Oats and Oat flour
  • Baking powder
  • Salt
  • Cranberries
  • White chocolate

  • large mixing bowl
  • spatula
  • cutting board
  • knife
  • baking sheet
  • silicon baking mat or parchment paper
  • measuring cups
  • blender for oat flour if making your own

Ingredients

  • 2 bananas, mashed
  • 1/4 cup ground flax
  • 1/4 cup almond milk
  • 1/4 cup coconut sugar
  • 1 tbsp cinnamon
  • 1 1/4 cup oats
  • 3/4 cup oat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup dried cranberries
  • 1 cup chopped white chocolate

18 cookies

Directions

  1. Preheat oven to 350F and prepare a baking sheet by lining it with parchment paper or a silicon baking mat.
  2. In a large bowl, mash bananas then add in ground flax, almond milk, coconut sugar and cinnamon. Whisk until well incorporated.
  3. Then, add in oats, oat flour, baking powder and salt and mix once more.
  4. Fold in dried cranberries and white chocolate last. Mixture will be a bit wet, but that’s okay.
  5. Using a cookie scoop, scoop batter onto prepared baking sheet and flatten slighting with fingers. For a large cookies, use two scoops.
  6. Bake for 12-14 minutes. Allow to cook for a few minutes before removing from the baking sheet.
