For this recipe I used an english cucumber, but any kind will work.

Use freshly squeezed lime juice for best results.

A touch of agave gives this juice a subtle sweet flavor, you can also use maple syrup or honey.

Fresh mint leaves add a ton of flavor.

A small piece of ginger root will give this mocktail a slight kick.

Filtered water is added to the blender to help combined all the ingredients.

This mocktail is topped with club soda for the perfect touch of fizz. Sub for ginger beer or soda water.

ONE: In a blender, add in cucumber, mint, ginger, agave and water. Blend until smooth and creamy. Then, pour the mixture into a strainer to remove the pulp. Set aside.

TWO: Next, fill a glass with ice and add in thinly sliced cucumbers. Pour the green juice over the ice leaving about 1 inch of space. Top it off with club soda and garnish with mint. Enjoy!

Tips and tricks

Use a high speed blender and keep blending until ingredients are well incorporated.

A strainer will remove the pulp quickly and easily, but you can also use a cheese cloth.

Add in more ginger if you want this mocktail to have more of a kick.

How to serve and store

Serve this Cucumber Mint Mocktail over ice with fresh cucumber slices and mint for a garnish.

Store the juice in an airtight container, separate from the club soda, and enjoy within 3-4 days.

This cucumber mint mocktail is extremely refreshing. It tastes like a fancy green juice that you’d get at a juice store! It has a slight “spicy” kick to it from the ginger root, but it’s very subtle.

Ingredients

  • 1 large English cucumber, sliced.
  • 1/2 cup lime juice, about 2.5 limes.
  • 2 tbsp agave, sub maple syrup or honey. 
  • 1/4 cup fresh mint leaves, about 10-12 leaves
  • 1 small piece fresh ginger, about 2 inches.

  • Club soda, to top off each mocktail.
