Ingredients

  • 1 cup oat flour
  • 1/4 cup coconut flour
  • 1/3 cup coconut sugar
  • 1/2 cup cacao
  • 1/2 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup apple sauce
  • 2/3 cup almond milk
  • 1/3 cup non-dairy vanilla yogurt
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips
Frosting
  • 1/2 cup vegan butter
  • 2 cups powdered sugar
  • 5 tsp superfruit antioxidant blend

12 muffins

Directions

  1. Preheat oven to 365F and prepare a muffin tin by spraying with non-stick spray or lining it with parchment paper.
  2. In a medium bowl, combine oat flour, coconut flour, coconut sugar, cacao, baking powder, and salt.
  3. Then, in a large bowl, combine apple sauce, almond milk, non-dairy yogurt, and vanilla extract.
  4. Add dry ingredients to wet ingredients and mix with a spatula until well incorporated.
  5. Fold in chocolate chips.
  6. Using a cookie scoop, scoop batter and pour into prepared muffin tin. These will rise slightly during baking, so you want to fill them up to the top. Spread evenly.
  7. Bake for 25 minutes. Allow to cool for 10 minutes before removing from the muffin tin. Allow to cool on a cooling rack for 15-20 minutes before frosting.
Frosting
  1. In an electric mixer, combine butter, powdered sugar and superfruit powder and beat on high speed for 2-3 minutes.
  2. The longer you beat the butter, the fluffier your frosting will be.
  3. Add to muffins and enjoy!
