This french toast bake is simple to make and is beyond delicious! It’s made with pieces of low carb bread that are covered in an egg + almond milk mixture, and then topped with a touch of brown sugar before being baked in the oven.
It’s soft, gooey, warm and delicious. Top it off with a touch of powdered sugar and fresh fruit like red, juicy strawberries for a complete meal.
Ingredients and Substitutions
This recipe is made with Sola Honey Wheat bread which is a great low carb, but high protein option. You can sub any type of flavor from Sola Sweet, or any type of bread.
Eggs are used to give this breakfast bake a fluffy texture.
You can use any type of milk for this recipe. Almond milk, coconut milk, cashew milk and oat milk are great options.
A touch of maple syrup is used to help add a bit of sweetness. Try using honey, agave or date syrup, or just omit altogether.
Cinnamon adds both flavor and warmth.
Vanilla extract adds a lovely flavor.
A pinch of salt helps balance out all the flavors.
This french toast bake is topped with a sprinkle of brown sugar which gives the top of this bake a lovely crunchy, caramelized flavor and texture. You an omit or use another sugar such as granulated or coconut.

How to make
This low carb french toast bake is unbelievable easy to make. You have the option to make it the night before, or the day of if you’re crunched on time. Let’s briefly go over it here, but be sure to check out the recipe card at the bottom of this post for detailed instructions.
ONE: Cut loaf slices into bite sized cubes and place them into a greased oven safe baking dish.


TWO: In a large mixing bowl, add in almond milk, eggs, maple syrup, cinnamon, vanilla and sea salt. Whisk until ingredients are well combined.


THREE: Pour mixture into baking dish with bread pieces and mix until each piece is well coated. Cover and refrigerate for 20 minutes.

FOUR: Top with brow sugar and then bake at 350F for 20 minutes covered, and then 15 minutes uncovered.


FIVE: Top with strawberries and powdered sugar, enjoy!


Tips and Tricks
Be sure to soak the bread long enough: You want the egg mixture to seep deep into the bread for a soft, gooey center. I have found that 20 minutes is the sweet spot.
Bake the casserole covered, then uncovered for a crispy golden brown top.
Make sure to cut the bread pieces into bite sized pieces.
When adding on the liquid mixture, make sure each piece is well coated.
Top with powdered sugar and fresh fruit for the perfect amount of sweetness.
How to serve and store
Let French Toast Bake sit on the counter for 5 minutes to slightly cool down before serving.
Top with fresh fruit and strawberries.
Pair it with a drizzle of maple syrup for added sweetness.
