Frozen peaches are absolutely necessary to achieve that slushy, sorbet texture. You can use store bought frozen peaches, or freeze your own slices.
Maple syrup adds a more sweet taste, you can also use agave, honey or just leave it out. However, the bellini pay be more on the tart side depending on how sweet your frozen peaches are.
Prosecco or champagne will give this cocktail that bubbly taste and texture.
Freshly squeezed lime juice balances out the sweet flavor while adding in a subtle tang.
Option to top off your cocktail with grenadine but definitely not a necessity!

how to make
ONE: Add all the ingredients to a blender and blend until smooth and creamy.
TWO: Pour into glasses and top off with grenadine or more prosecco. Garnish and enjoy!

Blend ingredients until you have a sorbet texture. I love using my BlendJet or the NinjaFoodi Blender.
If you want your bellini texture to be more liquid than sorbet, add in more prosecco to your finished glass and mix until well incorporated.
How to serve and store
Serve this frozen peach bellini with grenadine, a fresh lime wedge and some mint for a garnish.
Since this cocktail is frozen, it’s best enjoyed immediately. Storing leftovers will result in a melted bellini, but will still taste fantastic.
