If you love my variety of cottage cheesecake jars, this gingerbread version might just be the most festive one yet. It has that classic creamy texture you get from blending cottage cheese and Greek yogurt, but the warm gingerbread spices, maple syrup, and molasses give it the holiday magic moment we all want this time of year. The gingersnap crust adds the perfect crunchy, buttery contrast, and the whole thing comes together in minutes — no baking, no fuss.

If you’re planning a holiday dessert spread, you could pair them with my Cranberry Bliss BarsPomegranate Chocolate Bark, or any of my holiday cookies for a little variety. The flavors play so well with everything else you may already be making this season, and since these cheesecake jars can be prepped ahead of time, they’re perfect when you want something festive that still feels effortless.

How to Make

Make the crust: Crush the gingersnaps until fine. Mix with melted butter if you want a softer, cheesecake-style layer. Spoon some into the bottom of each jar.

Blend the filling: Add cottage cheese, Greek yogurt, maple syrup, vanilla bean paste, ginger, cinnamon, nutmeg, cloves, salt, and molasses to a high-speed blender. Blend until completely smooth and creamy.

Assemble the jars: Spoon or pipe the gingerbread cheesecake mixture over the crust.
Enjoy right away or refrigerate for 1–2 hours to help it thicken and set.

Serve: Finish with whipped cream, more gingersnap crumble, and a pinch of cinnamon.

Tips and Tricks

  • Blend until completely smooth: Cottage cheese can stay a little grainy if under-blended, so give it a full 30–60 seconds in a high-speed blender for that ultra-creamy cheesecake texture.
  • Adjust the spices to your vibe: If you want a stronger gingerbread flavor, add a little more ginger or a splash of molasses; for something milder, stick to the lower end of the spice measurements.
  • Chill for the best texture: You can enjoy the jars right away, but letting them rest in the fridge for 1–2 hours helps them thicken and taste even more cheesecake-like.
  • Customize the crust: Use melted butter if you prefer a softer, more traditional cheesecake crust, or keep the gingersnap crumbs dry for extra crunch.
  • Decorate just before serving: Add whipped cream, extra crumble, and maple drizzle right before enjoying so everything stays fresh, fluffy, and crisp.

How to Save and Store

These Gingerbread Cottage Cheesecake Jars store beautifully, making them perfect for meal prep or holiday entertaining. Simply cover each jar with a lid and refrigerate for up to 3–4 days. Hold off on adding the whipped cream and toppings until right before serving so they stay fresh and crisp. The crust will naturally soften over time, but if you prefer it extra crunchy, add the gingersnap layer just before eating.

Freezing isn’t recommended, as the dairy base can become icy and lose its creamy texture.

Creamy, no-bake Gingerbread Cottage Cheesecake Jars made with cottage cheese, warm holiday spices, and a crunchy gingersnap crust. A festive, easy-to-assemble holiday dessert that comes together in minutes.
Prep Time 10 minutes
Total Time 10 minutes
Servings 2 jars

Ingredients

Cheesecake Filling:

  • 1 cup cottage cheese (I use Good Culture 2%)
  • ½ cup Greek yogurt
  • ¼ cup maple syrup
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1-1½ teaspoons ground ginger
  • 1 teaspoon cinnamon
  • teaspoon nutmeg
  • teaspoon cloves (or just a pinch if you want it mild)
  • Pinch of salt
  • Optional but highly recommended: ½ teaspoon molasses for true gingerbread flavor

Crust Layer:

  • 6-8 gingersnap cookies (crushed)
  • 1-2 teaspoons melted butter (optional — makes a softer, more traditional “crust”)

Toppings:

  • Extra gingersnap crumble
  • Whipped cream
  • Maple drizzle
  • Cinnamon dusting

Notes

  • The molasses is optional but adds a deeper, more authentic gingerbread flavor if you prefer a stronger spice profile.
  • You can assemble these jars in any container you have — small mason jars, Weck jars, or even glasses work great.
  • If your mixture seems too thick after blending, add a splash of milk to help it blend smoothly.
  • For a sweeter jar, add an extra drizzle of maple syrup on top before serving.
  • The filling can be made a day ahead and stored separately; assemble just before serving for the freshest texture.
