Gluten-free Chai Loaf

What is a chai loaf?
This vegan chai spice loaf cake is the perfect sweet treat. It’s soft and tender, full of chai tea flavor, easy to make, and just so dang delicious!
This Chai Loaf cake is thick, soft and chewy. It taste great paired with a cup of chai or cup of warm coffee. It’s such a good cake, and hard to stop at just one slice!
I used gluten-free flour for this recipe so it’s suitable for those following a vegan and gluten-free diet.

Ingredients needed to make Chai Loaf Cake
This loaf cake is such a lovely delight! It’s a perfect combination of sweet and spiced, tender and chewy. I used chia tea from The Chai Box, which gave this cake a dark rustic color. I used wholesome ingredients in this loaf cake that make it full of nutrients and better-for-you ingredients!
Gluten-free flour- My favorite blend of gluten-free flour is from Bob’s Red Mill. It always makes my baked goods turn out so fluffy, light and the most amazing texture.
Baking powder- You will need this to help the loaf rise. Since this loaf cake is vegan and gluten-free, I am not using any eggs, butter, or oil. So this loaf cake will not rise much, which is why the baking powder is so important to give it a little fluff.
Salt- salt in important to balance out the sweet flavors in this loaf cake.
Spices- Cinnamon, nutmeg and ginger are needed to give this loaf cake an even more spice flavor to really bring out the chai tea.
Coconut Sugar- coconut sugar is a low glycemic meaning it won’t spike your blood sugar.
Apple Sauce- apple sauce is a great alternative to use in recipes instead of butter. It’s a natural sweetener as well.
Banana- mashed banana is a great alternative to use in recipes instead of eggs. The texture is similar to a mashed egg, and since we only use one small banana for this recipe you won’t taste it in the end product.
Chai Tea- Freshly brewed chai tea is used in this recipe, that’s what gives this loaf that dark color. This makes the loaf full of flavor and spice!
How to make chai tea?
You can use pre-brewed chai tea. But if you want to get fancy with it, like I did, you can brew fresh chai tea that will make this loaf full of flavor.
Simply, boil 1 cup of hot water with 1-2 Tbsp of chai blend. I used the classic chai blend from The Chai Box. Allow it to boil, then add in 1/4 cup of almond milk. Return to a boil for 1-2 minutes. Remove from heat, strain and enjoy!
