These three ingredient gluten-free waffles are perfect for weekend brunch! The waffles are tender, soft and have a fluffy texture. They taste amazing with some non-dairy butter and maple syrup!
You’ll only need a few simple ingredients to make these waffles. I used coconut flour, eggs and over ripe bananas!

THAT’S IT. Now, you can get creative with the toppings if you want! They taste amazing with fresh berries, chocolate chips or any other of your favorite toppings!

How to make gluten-free coconut flour waffles
To make these gluten-free coconut flour waffles you will only need to follow a few simple steps.
For starters, you will want to preheat your waffles iron skillet over medium heat. While that is preheating, you can start to make your waffle batter.
In a large bowl, mash two over-ripe bananas, then whisk in two eggs. Once you have the banana and egg mixture, add in the coconut flour and whisk once more.
Spray your waffle skillet with non-stick spray and then add in 1/4-1/3 cup of batter. Then close and allow to cook until desired crispness. I like to do mine over medium! This waffle recipe makes 4 small waffles.
Top them off with butter, maple syrup or fresh fruit and enjoy!
