I absolutely love the taste of tahini in chocolate chip cookies. It adds such a unique flavor profile that really compliments the chocolate. One of my most remade recipes are my chocolate chunk tahini cookies that are made with oatmeal. However, if you are gluten-free, then this tahini chocolate chip cookie recipe is for you since these are completely flourless, making them 100% gluten-free.

Ingredients for the flourless tahini chocolate chips cookies
Tahini– Tahini is seed butter that is made from toasted ground hulled sesame seeds. It has an almost peanut like flavor, but it is completely nut-free. My favorite brand is Soom Foods, you can use code LOVELYDELITES for a discount.
Coconut sugar– However, you can sub brown sugar if you’d like. I prefer cooking with coconut sugar because it contains healthy fats that are known to help prevent high cholesterol and heart disease.
Ground flax seed– Great source of fiber and omega-3s! I love adding ground flax into my baked goods as it doesn’t alter the flavor and it adds a great nutritional value.
Vanilla extract– Is a cookie even a cookie if it doesn’t have any vanilla in it? Vanilla is a key ingredient in your traditional chocolate chip cookie. I like to use vanilla bean paste or pure vanilla bean as it has a ton of more flavor. However, vanilla extract works just as good!
Baking powder– Baking powder is used to increase the volume and lighten the texture of baked goods. Since these are completely flourless, the baking powder will help these become nice and fluffy.
Egg– These cookies will not work without a binding agent, which in this case is an egg. You can sub the egg for banana, or an egg replacement such as Bob’s Red Mill. A flax egg won’t work here.
Non-dairy chocolate chips– If vegan or dairy sensitive. If not, you can sub your favorite chocolate chips!

How to make delicious gluten-free chocolate chip cookies
You’re just a few steps away from making the best gluten-free tahini chocolate chip cookies. All you need is one big bowl, a spoon and just a few minutes of your time.
To start, you will preheat your oven to 350F. This is such an important step! Nothing is worse than having your cookies ready to go and then realizing you forgot to preheat the oven.
While the oven is preheating, start mixing your ingredients. To do this is quite simple, in a large bowl add all your ingredients (except for chocolate chips) and either with a whisk, wooden spoon, or mixer- mix until well combined.
Once you have your batter, fold in the chocolate chips and your batter is ready for baking!
To make things easy, I like to use a cookie scoop. This ensures that all cookies are the same size and it’s really simple plop them on the baking sheet. However, if you do not have a cookie scoop, you can simply use a spoon or table spoon.
Once you have arranged your cookies on the baking sheet. Bake in the oven for 10-12 minutes, allow the cookies to cool for a few minutes before moving to a cooling rack. Repeat the process until the batter is finished.

This is a great recipe. I’ve tried other tahini chocolate chip cookies and this was the best structure, by far.
