Grain-free Sweet Potato Tortillas

Who know making your own homemade tortillas could be so easy! Grain-free Sweet Potato Tortillas are made with sweet mashed potatoes and a blend of coconut and tapioca flour. They come together in under 20 minutes and are jam packed with flavor!

I didn’t realize just how simple it was to make your own homemade tortillas until I saw a few videos on tiktok. Most recipes called for mashed sweet potatoes and flour, however, I wanted to ensure these tortillas would remain free from gluten so that they could be enjoyed my everyone.

These sweet potato tortillas are made with just five simple ingredients and come together in just about 20 minutes if you already have prepared sweet potatoes. I really love to prep these in the beginning of the week and use them for meals throughout.

They make for a great savory breakfast with some eggs, spinach and tomatoes. They are perfect for tacos or even used as a crust for pizza! There are really so many possibilities. Let me know if you try this recipe by tagging me on social media or leaving a comment and rating below!

Ingredients and substitutions:

You will only need fourish simple ingredients to make these sweet potato tortillas! I know I’ll be asked if there are substitutes, so i’ve outlined them here for you just incase!

sweet potatoes- I cooked my sweet potato in the instant pot and it only took about 20 minutes! It’s the easiest and quickest way to prepare potatoes in my opinion. No need to turn on the oven, especially during the warmer seasons!

coconut flour- I used only a small amount of coconut flour for this recipe. Coconut flour is extremely absorptive, meaning a little goes a long way! Coconut flour is grain-free and gluten-free so I love using it in my baked goods.

tapioca flour- tapioca flour is the main flour in this recipe. Tapioca is a starch that is extracted from the storage roots of the cassava plant. It is also grain-free and gluten-free and works great as a binding agent in many recipes.

salt- just a small amount of salt to balance and add flavor to these tortillas.

coconut yogurt- this is optional in the recipe, but I believe it adds some flavor to the tortillas. To keep these tortillas vegan, it’s necessary to use a vegan yogurt. If you aren’t vegan you can use any other yogurt or just omit it all together.

Can I use regular flour?

YES! If you don’t care for these tortillas to be gluten-free, then you can use all purpose flour in replacement of the tapioca and coconut flour. I would suggest using 1.5-2 cups of all purpose flour.

How to make sweet potato tortillas

If you already have prepared sweet potatoes then you will skip the longest part of this process and go straight to making the tortillas. If you still need to prepare your sweet potatoes then you can do so by baking them in the oven, or steaming them in the Instant Pot which is my preferred method.

Once you have your prepared sweet potatoes then it’s really all about adding everything together in a bowl and then cooking the tortillas on the stove top!

To start, add the cooked sweet potatoes to a large bowl and mash them down really well with a potato masher or fork.

Next, add in the rest of the ingredients starting with the tapioca flour, coconut flour, salt, and coconut yogurt. Mix these ingredients together using a rubber spatula until a dough begins to take shape.

Grab about 1/4-1/3 cup of the dough and roll it into a ball. Place the dough on a clean floured surface and using a rolling pin, roll it out into a tortilla shape.

You want the tortillas to be on the thinner side so they will cook all the way through, about 1/4 of and inch. Place the tortillas onto a plate lined with parchment paper so they don’t stick and repeat the process until the dough is finished.

Heat a large skillet over medium heat and then lightly coat it with non-stick spray. Add the tortillas to the skillet and let them cook for about 3-5 minutes on each side or until they are firm and cooked all the way through.

Let them cool and enjoy warm, or store in the fridge in an airtight container and enjoy within 4-5 days.
