Grain Free White Chocolate Cranberry Cookies

The most perfect Thanksgiving cookie
With Thanksgiving being right around the corner, I’ve pretty much maxed out the amount of cranberry combinations that I could make this year. I’ve been busy in the kitchen trying all sorts of things. One thing that I overstocked my pantry with this year were pecans and dried cranberries- so what better way to use those up than throwing them in a cookie to enjoy on Thanksgiving day.
This recipe is grain free which makes it suitable for those that are gluten-free. White Chocolate Pecan Cookies are made with a blend of Almond Flour and Coconut Flour.
These cookies are also suitable for those that follow a paleo diet as these cookies are made with maple syrup, eggs, and almond butter.

Ingredients in White Chocolate Pecan Cookies
If you’ve been here for awhile, you know that I love to keep recipes simple with minimal ingredients. This recipe is no different. We are going to use two different flours, almond flour and coconut flour, and just a few natural sweeteners like apple sauce and maple syrup.
Almond Flour– Start with almond flour. This ingredient makes the perfect grain free base and is a great way to fill your recipe healthy fats.
Coconut Flour– Coconut flour works great when mixed with almond flour for a based of a recipe. The two combined allow the recipe to be more hearty and not fall apart. Coconut flour is also rich in fiber and MCTs.
Baking Powder– Baking powder is used to increase the volume and lighten the texture of baked goods
Almond Butter– Almond butter is a great source of healthy fat, protein, and fiber which are essential for heart health. Using almond butter in a recipe is a great way to replace any processed fats with a healthy and wholesome ingredient.
Apple Sauce– I love using apple sauce in my recipes. When baking, you can replace the butter in your recipe with half the same amount called for of applesauce. I love to use the apple sauce from Trader Joe’s because the only ingredient is apples. Be careful not to use an apple sauce that contains a ton of added sugar and processed ingredients.
Egg– Since these cookies are grain free, you have to have a binding agent- such as an egg- to keep it all together.
Vanilla– Vanilla is so important to use in recipes. It just adds that extra flavor to baked goods that I will always miss without. I love Simply Organic Vanilla or LoneGoose HANNAH10 get’s you a discount!
Maple syrup– Pure maple syrup is a great alternative to sugar in recipes. It’s natural and therefore contains vitamins and minerals. I love using maple syrup in my recipes as it gives my baked goods such an amazing taste.
Dried cranberries– I love the dried cranberries from Trader Joe’s as these are organic and have no added sugar! They are a seasonal item though, so I love to stock up during the Fall season.
Pecans– Raw pecans work best for this recipe. They add a nice buttery flavor and soft texture to the cookies.
White Chocolate– I love baking with Lily’s White Chocolate as it has no added sugar and is instead sweetened with stevia.

What you’ll need for this recipe:
- Two mixing bowls: One medium, one large
- Rubber spatula
- Baking Sheet
- Parchment Paper or a Silicon Baking Mat
- Measuring cups
How to make delicious white chocolate cranberry cookies
White Chocolate Cranberry Cookies is one of the easiest cookie recipes that you will make. You don’t need any fancy equipment, just a few mixing bowl and utensils are you’ll be on your way!
To start, preheat the oven to 350F and line a baking sheet with parchment paper or a silicon baking mat. I love to use the silicon baking mat because it is reusable and I believe it bakes a better cookie. However, I also recommend If You Care Baking Sheets as they are made with recycled paper.
In a large mixing bowl, combine almond flour, coconut flour and baking powder and mix with a whisk until ingredients are well incorporated.
Then, in the medium bowl, combine almond butter, apple sauce, egg, vanilla, and maple syrup and mix until ingredients are incorporated.
Next, pour wet mixture into dry and fold until ingredients are well combined.
Fold in dried cranberries, pecans and white chocolate last.
Using a cookie scoop, scoop batter and place onto the prepare baking sheet. Flatten slightly with hands and add additional toppings. Optional, but strongly encouraged!
Bake for 12-14 minutes or until cookies are golden brown. Allow to cool for 10 minutes before removing from baking rack.
Drizzle with additional white chocolate. Again, optional but strongly encouraged.
