Ingredients And Substitutions

The main ingredient in this recipe is corn flakes which are naturally gluten free. This gives this candy bar that classic butterfinger taste and texture.

Peanut butter is a must as well to achieve that same butterfingers flavor. You can however use almond butter or cashew butter but this will change the flavor profile of these bars.

These candy bars are sweetened with maple syrup but you can easily use honey or agave. The sweetener needs to be liquid though so granulated sugar won’t work the same.

After the base is made, these bars are coated in a dairy free chocolate that is melted with a touch of coconut oil. You can use regular milk chocolate if not vegan, or white chocolate if desired.

How To Make

ONE: Start by crushing the cornflakes until there are no big chunks left.

TWO: Mix together the maple syrup and peanut butter, then add the mixture into the corn flakes and mix until well incorporated.

THREE: Form the pieces into candy bar shapes, for Easter I did easter eggs but you can do circles or rectangles for a more classic look. Place these on a baking sheet that is lined with parchment paper and freeze for 10 minutes.

FOUR: Next, melt the chocolate and then dip and coat each piece in the chocolate and place back on the parchment paper and freeze for 10 more minutes before enjoying.

Once the chocolate has hardened completely, you can keep these stored in the fridge for a perfect grab and go snack.

How To Serve And Store

Serve these healthy butterfingers once they have completely hardened the second time. You can keep them stored in the freezer and they will last 90 days or longer. Or you can keep them in the fridge and enjoy up to a few weeks!

Taste And Texture

These healthy butterfingers taste like butterfingers but without the stickiness of the bars getting stuck in your teeth. They’re crispy and full of sweet peanut butter flavor. A truly addicting treat.

Ingredients

  • 3.5 cups corn flakes
  • 1/3 cup maple syrup, can sub honey or agave
  • 1 cup creamy, all natural salted peanut butter
  • 1 cup dairy free or regular chocolate chips, melted

Directions

  1. Start by crushing the cornflakes until there are no big chunks left. You can do this in a ziplock bag or in a large bowl with a smaller bowl. 
  2. In a small bowl, mix together the maple syrup and peanut butter until fully combined.
  3. Add the mixture into the corn flakes and mix until well incorporated.
  4. Form the pieces into candy bar shapes, or for Easter, I did easter eggs. But you can do circles or rectangles for a more classic look.
  5. Place these on a baking sheet that is lined with parchment paper and freeze for 10 minutes.
  6. In the meantime, melt the chocolate  on the stovetop or in the microwave. If melting in the microwave, do it with a 1/2 tbsp of coconut oil and heat in 30 second increments, stirring well in between each round.
  7. Then dip and coat each piece in the chocolate and place back on the parchment paper and freeze for 10 more minutes before enjoying.
