This recipe uses canned fire roasted corn, but you can easily swap for fresh corn on the cob if you’d like. Just be sure to cook it properly and cut it off the cob.
Green chilies adds the perfect amount of heat without being too overwhelming.
Red bell pepper adds a bright color and a bit of a crunch.
Fresh jalapeno also adds a bit of heat to this dip too, just be sure to remove the seeds if you don’t like spicy!
Cottage cheese adds a ton of protein to this dip as well, it’s a great alternative instead of using cream cheese like traditional corn dips.
Greek yogurt is a great substitute for sour cream and also adds protein to this dip.
A combination of garlic powder, onion powder and paprika adds great flavor.
Highly recommend adding on cotija cheese, cilantro and fresh lime juice to really tie all the flavors together.
How To Make
ONE: First diced the jalapeno and red bell pepper and set aside. Then, when ready add the drained fire roasted corn to a skillet over medium heat with diced bell peppers, jalapeños and green chilies.
TWO: Mix well and then add in the cottage cheese and greek yogurt.
THREE: Once combined, mix in the seasonings and then use a slotted spoon to remove the corn from the skillet and place into a bowl. Top with cotija cheese, cilantro and fresh lime juice and enjoy warm with chips!

To make a traditional corn dip, using sour cream and cream cheese instead of cottage cheese and greek yogurt.
The cottage cheese does create a liquid in this dip, so it’s recommend to drain the liquid before serving.
