This Healthy Corn Dip comes together in just about 15 minutes and is loaded with simple ingredients like corn, bell pepper and jalapeno. It's made with cottage cheese and greek yogurt which gives it a bit of a protein boost too. Enjoy with chips or on top of tacos as a salsa- it's delicious!

Ingredients And Substitutions

These are the main ingredients and substitutions for Healthy Corn Dip. Scroll down to the recipe card for a full list of ingredients and instructions.

This recipe uses canned fire roasted corn, but you can easily swap for fresh corn on the cob if you’d like. Just be sure to cook it properly and cut it off the cob.

Green chilies adds the perfect amount of heat without being too overwhelming.

Red bell pepper adds a bright color and a bit of a crunch.

Fresh jalapeno also adds a bit of heat to this dip too, just be sure to remove the seeds if you don’t like spicy!

Cottage cheese adds a ton of protein to this dip as well, it’s a great alternative instead of using cream cheese like traditional corn dips.

Greek yogurt is a great substitute for sour cream and also adds protein to this dip.

A combination of garlic powder, onion powder and paprika adds great flavor.

Highly recommend adding on cotija cheese, cilantro and fresh lime juice to really tie all the flavors together.

How To Make

ONE: First diced the jalapeno and red bell pepper and set aside. Then, when ready add the drained fire roasted corn to a skillet over medium heat with diced bell peppers, jalapeños and green chilies.

TWO: Mix well and then add in the cottage cheese and greek yogurt.

THREE: Once combined, mix in the seasonings and then use a slotted spoon to remove the corn from the skillet and place into a bowl. Top with cotija cheese, cilantro and fresh lime juice and enjoy warm with chips!

Tips And Tricks

Use fire roasted corn from a can to add a ton of flavor.

To make a traditional corn dip, using sour cream and cream cheese instead of cottage cheese and greek yogurt.

The cottage cheese does create a liquid in this dip, so it’s recommend to drain the liquid before serving.

For best results, enjoy dip warm.

How To Serve And Store

Serve this Healthy Corn Dip warm and with your favorite chips. I like to use Siete grain free tortilla chips.

Store leftovers in an airtight container in the fridge and enjoy up to 5 days.

Can I use fresh corn instead of canned corn?

Yes, totally! Just be sure to cook it properly before cutting off the cob.

Is this dip spicy?

It has a slight kick to it, but it’s not overwhelming at all. Just make sure to remove the jalapeno seeds from the jalapeno before slicing- the seeds are what makes them spicy.

Is this dip best served chilled or warm?

I prefer it warm, but cold or room temperature still tastes amazing!

Ingredients

  • 2 cans of fire roasted corn, 14.8oz each can
  • 1 can of green chillies, 7oz
  • 1 red bell pepper, about 1 cup diced
  • 1/4 cup diced jalapeno, seeds removed
  • 1 cup cottage cheese, I used Good Culture
  • 1/2 cup plain greek yogurt, I used Greek Gods
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup cotija cheese
  • Juice from 1 lime
  • 1/4 cup cilantro, diced

Directions

  1. First dice the jalapeno and red bell pepper and set aside.
  2. Then, when ready add the drained fire roasted corn to a skillet over medium heat with diced bell peppers, jalapeños and green chilies. Mix well and then add in the cottage cheese and greek yogurt.

  4. Top with cotija cheese, cilantro and fresh lime juice and enjoy warm with chips!
